Hi friends!!! Fall is here, which means cozy sweaters, fuzzy socks, pumpkin and apple recipes GALORE, and more of THIS GIRL! Summer is always my busy season as I balance running my blog full time, as well as working a part time job, and doing restaurant photography.
My part time job is seasonal, so from here on in you’ll be seeing a lot more new content and recipes, starting with this Apple Coffee Cake that is completely gluten free and dairy free! You can easily make this into muffins, just reduce the cooking time accordingly.
This cake is lightly sweetened so it’s not overpowering and can even be eaten for breakfast. It’s still plenty sweet for dessert though, and if you wanted to add a scoop of low carb vanilla ice cream I wouldn’t hold it against you!

HOW DO YOU EAT THIS GLUTEN FREE APPLE COFFEE cRUMB CAKE?
- The moment it comes out of the oven, straight out of the pan
- Reheat it in the microwave briefly
- Or my personal favourite… cut a piece in half, load it with vegan butter, and put it in the oven or toaster oven to crisp it up. And serve with a scoop of vegan vanilla ice cream!
Substitutions For gluten free Crumb Cake
As per usual, I haven’t tried these substitutions. These are just my best-educated guesses. Good luck!
Dairy Free: In place of grass-fed butter in the streusel, use vegan butter. I love Earth Balance or Melt!
Sugar Free: In this recipe I am using monk fruit sweetener to keep it lower in sugar content! You can absolutely still use brown sugar as I realize monk fruit isn’t a very common ingredient!
Gluten Free: I love using almond flour and gluten free oat flour in many of my baking recipes. I have not tested this with other flours but I can assume all-purpose flour would work okay in place of the almond flour!
This warm spiced cake is tender and moist. It’s filled with tiny apple chunks and topped with a sweet chunky crumble. If you’re looking for a simple coffee cake or dessert for a cozy fall or winter day, this is one to consider. Served with a cup of coffee, tea or a cold glass of milk, this makes a lovely breakfast or afternoon snack. It can even be served for dessert – it is delicious any time of the day!
It’s official everyone, you CAN have your coffee cake and eat it too with this easy gluten-free recipe. Which tastes just like the real thing!

Ingredients
- FOR THE CAKE
- 1 1/2 cup almond flour
- 3/4 cup gluten free oat flour, can blend up quick oats in food processor
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 cup extra virgin olive oil
- 1/4 cup maple syrup
- 1/4 cup unsweetened apple sauce
- 3 eggs
- 2 apples peeled and sliced VERY thin
- pinch of salt
- FOR THE STREUSEL
- 3/4 cup almond flour
- 1/3 cup golden Lakanto sweetener, or regular brown sugar
- 1/4 cup grass fed butter, must be chilled
- 1 tsp cinnamon
- FOR THE ICING
- 1/2 cup powdered Lakanto sweetener, or regular icing sugar
- 2 tbsp soy milk
- 1/4 tsp vanilla
Instructions
- Start by making the streusel by combining the almond flour, sweetener, and cinnamon in a small bowl. Add the butter and use a potato masher to mix and create a crumb like texture. Put in refrigerator.
- Preheat oven to 350F.
- Spray a bread loaf pan with non stick spray and line with parchment paper.
- Start the cake by combining the flours, cinnamon, baking soda, and salt.
- In another bowl, combine the olive oil, maple syrup, apple sauce, and eggs.
- Combine the dry ingredients with the wet ingredients. Do not overmix.
- Peel and slice apples VERY thin. If you do not get the apples thin enough they will have a hard time cooking under the streusel topping.
- In the bread loaf pan start by adding the cake mixture, then add the slices apples and press down slightly. Top the cake with the streusel topping and bake for 30-40 minutes.
- While the cake is baking, start the icing. Mix together all ingrdients with a hand mixer and set aside till cake is done and cooled. Drizzle with icing when ready to serve!
