No-Bake Vegan Protein Bars (Gluten-Free)

These no-bake vegan protein bars taste like cookie dough with a dark chocolate top, and they happen to be gluten-free and dairy-free. Each bar has 14 grams of protein, no refined sugar, and they come together in about 35 minutes.

The best part of making cookie dough is eating it raw, so I built a protein bar around exactly that.

These vegan protein bars are a no-bake snack made with a peanut butter cookie dough base, coconut flour, and plant-based protein powder, finished with a layer of dark chocolate. Each bar has 14 grams of protein, and they are gluten-free, dairy-free, and free of refined sugar.

These are the bars I keep in my freezer for the after-dinner sweet craving or a grab-and-go snack on a busy day. No oven, no oats, no animal products, and no stomachache from raw cookie dough. The base tastes like real cookie dough, the dark chocolate top makes them feel like a candy bar, and at 14 grams of protein each, they actually hold me over instead of leaving me hungry an hour later.

Ingredients You’ll Need

(Full amounts are in the recipe card below.)

  • Natural peanut butter โ€” The base of the cookie dough. Almond, cashew, or sunflower butter all swap in.
  • Coconut oil โ€” Helps the dough come together and sets the chocolate top.
  • Sugar-free maple syrup โ€” Natural sweetness without the sugar spike.
  • Vanilla extract โ€” The cookie dough flavor. A little almond extract works too.
  • Sea salt โ€” A pinch balances the sweetness, just like in real cookie dough.
  • Coconut flour โ€” This is the structure, and you cannot swap it. It is far more absorbent than almond, oat, or rice flour, so substituting throws off the whole texture.
  • Plant-based vanilla protein powder โ€” The protein. I use 1UP Nutrition (code BAILS for money off). Whey works if you do not need them to be vegan.
  • Dark chocolate โ€” For the top layer. Real dark chocolate is my favorite here.

How To Make Vegan Protein Bars

  1. Grease a bread loaf pan with non-stick spray and set aside.
  2. In a medium bowl, melt the peanut butter and coconut oil together in the microwave in 30-second increments. Stir in the maple syrup and vanilla.
  3. Add the salt, coconut flour, and protein powder. Mix, then let it sit for 5 to 10 minutes so the coconut flour absorbs the liquid. The dough should be soft like play dough, not crumbly.
  4. If it is too dry, add a splash of almond milk or a little more maple syrup. If it is too wet, add a bit more coconut flour or protein powder.
  5. Press the dough evenly into the pan and put it in the freezer while you make the topping.
  6. Melt the dark chocolate and coconut oil in 30-second increments until smooth, then pour it over the dough.
  7. Freeze for 15 minutes until the chocolate sets. Cut into 8 bars.

Tips For The Best Protein Bars

  • Let the dough rest before pressing. Coconut flour keeps absorbing for a few minutes, so a dough that looks too wet often firms up on its own.
  • Adjust by feel, not by the clock. Every protein powder absorbs differently. Aim for a soft play-dough texture, not crumbly and not sticky.
  • Do not over-add coconut flour. It is so absorbent that even an extra spoonful can turn the bars dry and chalky. Add tiny amounts at a time.
  • Slice while cold. Cut straight from the freezer with a sharp knife so the chocolate top cracks clean instead of shattering.

Substitutions & Variations

  • Nut butter swap: Almond, cashew, or sunflower butter all work in place of peanut butter.
  • Biscoff: Swap the peanut butter for Biscoff spread. A reader tried this and loved it.
  • Chocolate brownie bars: Use chocolate protein powder and add a tablespoon of cocoa powder to the dough.
  • Dark chocolate almond: Press chopped almonds into the chocolate layer before it sets.
  • Lower calorie: Skip the chocolate top.

Storage & Freezing

  • Room temperature: Up to 1 week in an airtight container. I think they taste best this way.
  • Fridge: Also works, though they firm up more.
  • Freezer: Store in an airtight container for up to 3 months. They taste great straight from the freezer, or thaw in the fridge overnight.

FOR COOKIE LAYER

  • ยพ cup natural peanut butter
  • 1 tbsp coconut oil
  • โ…“ cup sugar-free maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3 tbsp coconut flour

FOR CHOCOLATE LAYER

  • 1 Lindt dark chocolate bar 100g or 2/3 cup dark chocolate chips
  • 1 tsp coconut oil

Instructions

  • Grease a bread loaf pan with non-stick cooking spray and set aside.
  • In a medium-size bowl, add the peanut butter and coconut oil and melt in the microwave in 30-second increments. Add maple syrup and vanilla extract.
  • Proceed by adding the salt, coconut flour, and vegan protein powder. Mix and let sit for 5-10 minutes while the coconut flour absorbs the liquid.
  • The dough should be soft but not crumbly, similar to play dough consistency. Different protein powders will absorb less or more liquid so you may have to make small adjustments.
  • If the dough is too dry and crumbly you can add a little bit more maple syrup or a splash of almond milk. If the dough is too wet add a bit more coconut flour or protein powder (not much though).
  • Press the dough into the prepared pan evenly, then put in freezer while you make the chocolate topping.
  • In a small microwave-safe bowl, melt the dark chocolate and coconut oil in 30-second increments until silky smooth. Then pour overtop of the dough.
  • Freeze for 15 minutes or until the chocolate has set. Cut into 8 bars and enjoy!
