So you might be wondering, what the heck is lotus Biscoff, and what is biscoff overnight oats?
Lotus Biscoff is a biscuit with a surprisingly crunchy bite and a unique taste that is loved all over the world. Lotus is known for its speculoos biscuits and biscuit-based products.
I have tried the cookies and well as the spread and both were truly life changing. So I thought, why not combine both and create lotus biscoff protein overnight oats.
This is a great way to get over 20 grams of protein to start your days.
Overnight oats can be made and enjoyed a few different ways. Typically, you mix all the dry ingredients and almond milk up the night before, leave it in the fridge to set, and grab and go in the morning.

Another way to consume overnight oats is making them the night before, then heating them over the stove in the morning. With these cookie butter overnight oats, it would be best to consume them cold.
They come together in a few minutes and taste just like a Biscoff cookie! These overnight vegan oats are creamy, filling and so easy to make!

WHAT YOU NEED TO MAKE BISCOFF OVERNIGHT OATS
You will need the following ingredients listed below to make these overnight oats (the full recipe, nutritional information, and exact measurements are in the recipe card below):
- Gluten-free old-fashioned oats or quick oats – It’s not required to use gluten free for the recipe to work, but you can if you want to lower gluten content. I recommend using old fashioned oats, and staying away from steel-cut oats.
- Whey Protein powder – My favourite type of protein powder is PEScience vanilla protein powder and you can use code BAILEY at checkout! They have really good vegan protein powder and chocolate protein powder.
- Chia Seeds – They help thicken the overnight oats by absorbing some of the liquid that might be seeping from the almond milk.
- Almond Milk – I prefer almond milk as it has a very neutral flavour in these making them almond milk overnight oats, but any non-dairy milk will work here. Cashew milk, coconut milk, oat milk, soy milk, hemp milk or soy can be used and regular cow’s milk will do the job as well if you would prefer to use that.
- Lotus Biscoff spread aka Biscoff Cookie Butter – You cannot make this recipe without it – it really is the star of the show. Adds creaminess, sweetness, and such an amazing flavour to this biscoff recipe. If you want a less sweet topping you can add different nut butters.
- Lotus Biscoff biscuits – they taste just like the spread, but in cookie form. This is why this recipe can also be called cookie butter overnight oats.
- Optional additional toppings – cottage cheese, greek yogurt, fresh fruit, pure maple syrup, chocolate chips, vanilla extract, brown sugar, etc.
HOW TO MAKE THIS OVERNIGHT OATMEAL RECIPE
- Add all oat ingredients to a bowl or mason jar. Stir well and refrigerate for minimum one hour.
- Melt Biscoff Spread and pour over prepared oats. Crumble a Biscoff cookie around the edges. Then put back in fridge overnight to set.

Storing homemade Biscoff overnight oats is a simple process that allows you to enjoy this delicious and convenient breakfast for days to come. Here’s how to store them properly:

- If you plan to consume the Biscoff overnight oats within the next 2-3 days, refrigeration is the best method.
- Transfer the prepared overnight oats to an airtight container or a covered jar.

CAN I USE QUICK OATS FOR OVERNIGHT OATS?
Yes, quick oats are rolled oats yield the best texture for protein powder overnight oats. Do not use steel cut oats for any high protein overnight oats recipe as they are not the best type of oats to use.
BENEFITS OF OVERNIGHT OATS VS COOKED
The benefits of overnight oats are different when they are cooked vs when they are soaked. When you soak oats overnight, the process is much slower and longer than actually cooking them.
Soaking them helps the starches break down and will end up reducing the natural phytic acid. This may help your body utilize the oats nutrients more efficiently than if they were cooked.
CAN YOU WARM UP OVERNIGHT OATS?
Overnight oats are typically served chilled, however if you prefer your protein oatmeal warm, then you can warm them up.
Either remove the vegan biscoff spread the next morning and heat the oats up in the microwave, or you can warm them over the stove.
Oats with blueberries are absolutely delicious warm or cold!
CAN YOU MAKE OTHER OVERNIGHT OAT FLAVOURS?
If you are not a huge fan of Biscoff, you can keep the overnight oats base in this recipe and switch out the flavours.
Some other flavours that would be delicious is cookies and cream overnight oats, chocolate overnight oats, or even overnight weetabix. It has also been trending to create different flavours and use weetabix as the base versus the overnight oats base.
CAN YOU MAKE OVERNIGHT OATS WITH WATER?
Yes, you can absolutely substitute water for almond milk or plant milks! This breakfast recipe may not end up being as creamy, but it will still work just fine.
WHAT IS THE BEST CONTAINER FOR OVERNIGHT OATS
There are lots of different options for protein overnight oats.
- Wide mouth mason jar – this option is very handy when prepping the overnight protein oats.
- Tupperware or meal prep container – this option is great when you are prepping a bunch of protein powder overnight oats ahead of time. During the busy mornings you can just grab and go!
- A bowl – this is more so for the stay at home mom who may want to reheat your high protein overnight oats recipe in the morning!
WHAT ARE THE CALORIES IN OVERNIGHT OATS?
It can vary a lot from recipe to recipe. If you are looking for a healthy breakfast recipe, I would stay away from Biscoff flavour.

There is nothing wrong with melted biscoff in moderation, I just don’t recommend consuming the cookie butter spread of lotus biscoff cookies daily.

The tastiest overnight oats recipe! Anything biscoff is always a winner and high protein too!
I have been making these every night to break my fast the next day for 3 weeks. They are so good and easy to make. I do make a slight change to the recipe. I use about a tablespoon of cookie butter and after it’s melted mix it with a couple tablespoons of plain Greek yogurt. It’s so good and creamy! Then of course add the crushed up cookie on top.
