Starbucks Bacon And Gruyere Egg Bites

These Starbucks Bacon And Gruyere Egg Bites are just like the Starbucks sous vide egg bites, but they are a lot less money and you can make them at home! They are loaded with protein from the eggs, cottage cheese, greek yogurt and bacon. The perfect grab-and-go breakfast option to start your day on the right foot!

So I recently shared on Instagram my Starbucks Spinach Feta Wrap and it seems to me that I’m not the only one who is scary obsessed with it. This shouldn’t surprise me as this day and age we’re all too busy for our own good. So in saying that, I decided to recreate the Starbucks egg bites recipe, and let me tell you I nailed it. 

I decided to start with the bacon and gruyere egg bites and eventually will make my way to recreate the Starbucks red pepper egg bites too. This egg bite recipe is convenient for busy mornings and SO delicious. It’s filled with good-for-you ingredients and will leave you satisfied for hours from all the protein content!

They’re pretty darn close to the real thing, but you can make them at home with your favourite mix-ins, and for a lot less money. You can also opt for egg whites only in this recipe if you’d rather a Starbucks egg white bites recipe.

STARBUCKS EGG BITES INGREDIENTS

These copycat egg bites are easily made with every day ingredients you probably have on hand. You will need the following ingredients listed below to make them (the exact measurements, nutritional information and full recipe are in the printable recipe card below):

  • Eggs – I recommend using pasture raised eggs but any type of eggs will work. You can also substitute for egg whites if you’d rather Starbucks egg white bites.
  • Cottage cheese – this ingredient is protein packed, giving the copycat starbucks egg bites an incredible flavour, texture, and nutritional value.
  • Plain greek yogurt – make sure you use plain unsweetened yogurt for these bacon egg bites as you don’t want any fruity flavours or unnecessary sugars.
  • Salt – you don’t need a ton in this recipe however I recommend a bit to really enhance and bring all the flavours together.
  • Bacon – if you want to opt for a vegetarian egg bite recipe then swap the bacon for more veggies. In some of these bacon gruyere egg bites I added spinach to add even more nutrition.
  • Gruyere cheese – if you have a hard time finding this type of cheese, asiago will also work well. There are tons of egg bites recipes out there with different types of cheeses so choose whichever you like best!

HOW TO MAKE STARBUCKS EGG BITES

  1. Preheat oven to 325F. Spray a silicone muffin tray with non stick cooking spray. Place a baking sheet (approx 16×12″ and something with high enough edges) under the silicone muffin tray and set aside.
  2. Using a non stick frying pan, cook the bacon until crisp over medium heat. Transfer to a paper towel and break into little pieces once cooled.
  3. In a high power blender, add the eggs, cottage cheese, greek yogurt, and salt. Blend on high for 30-40 seconds.
  4. Pour the egg mixture into the 12 silicone cups, then top with grated cheese and bacon. Mix the bacon and cheese around so it’s not all floating to the top.
  5. Place the baking sheet & silicone tray in the oven and add water to baking sheet till it’s about halfway full.
  6. Bake the eggs on the baking sheet filled with water for 25-30 minutes. CAREFULLY remove from oven (I grabbed the silicone tray with oven mitts and left the baking sheet to cool) and use a knife to cut around the outsides of the egg bites to loosen them from the tray.
  7. Close your eyes, pretend you’re at Starbucks, and enjoy them while they’re warm for a fraction of the price!

STARBUCKS EGG BITES NUTRITION

It depends which egg bites from Starbucks you are referring to. The Starbucks red pepper egg bites are lower in calories and fat as they are egg whites only. The bacon & gruyere egg bites have a higher calorie and fat content, but will most likely keep you satiated for longer. This is truly the best recipe for egg bites and a great alternative to the expensive ones from from Starbucks. 

ARE STARBUCKS EGG BITES KETO? 

These Starbucks copycat egg bites would be considered keto. They are filled with bacon and cheese and have a high fat content from those ingredients plus the eggs. If you want to reduce the fat content you could opt for egg whites and add more vegetables to the recipe instead of bacon.

STORING AND FREEZING THE STARBUCKS EGG BITES

  • Storing in the refrigerator: Add the copycat sous vide egg bites to an airtight container and refrigerate up to 5 days. You can microwave for 30-60 seconds in the microwave once you’re ready to eat them.
  • Storing in the freezer: Add the bites to an airtight container and freeze up to 2 months. Once the bites are thawed, reheat in the microwave for 60-90 seconds on high or until heated through.

  • 3/4 cup cottage cheese
  • 1/3 cup plain greek yogurt
  • 1 tsp salt
  • 4 strips bacon
  • 1/2 cup gruyere cheese, or aged asiago

Instructions

    Is it possible to use a regular time muffin pan or must it be silicone?

  2. Loved this recipe! Definitely will be a staple moving forward. I used silicone baking cups in a metal muffin tin with water under each. Worked great. Any idea the estimated macros?
