Copycat Starbucks Bacon and Gruyere Egg Bites Recipe (No Sous Vide)

These copycat Starbucks bacon and gruyere egg bites are made in a muffin tin with eggs, cottage cheese, Greek yogurt, Gruyere cheese, and crispy bacon โ€” no sous vide machine required. Silky, fluffy, high-protein, and ready to meal prep for the whole week.

The Starbucks bacon and gruyere egg bites are $6 for two. Two. I’ve done the math and I refuse to accept it.

The good news: you don’t need a sous vide machine to make these at home. You just need a blender, a muffin tin, and one secret technique โ€” a pan of hot water in the bottom of the oven that creates steam and gives the egg bites that silky, custard-like texture everyone’s obsessed with. I’ve made these more times than I can count and I genuinely cannot tell the difference from the Starbucks version.

Ingredients You’ll Need

(Full measurements are in the recipe card below.)

  • Eggs โ€” the base of every egg bite. Use large fresh eggs. The more eggs, the more structure โ€” don’t reduce them.
  • Cottage cheese โ€” the ingredient that makes the texture silky and custard-like when blended. Use full-fat for the creamiest result. Good Culture is my go-to brand. Don’t skip this โ€” it’s what sets this recipe apart from a regular baked egg.
  • Greek yogurt โ€” Bailey’s secret weapon that most copycat recipes don’t include. It adds extra protein and a subtle tang that makes these taste more complex and satisfying. Use plain, unsweetened full-fat Greek yogurt.
  • Gruyere cheese โ€” shredded. The authentic Starbucks flavor. It melts beautifully and has a nutty, slightly sweet flavor that pairs perfectly with bacon. Can’t find Gruyere? Monterey Jack or Swiss are the best substitutes. Starbucks actually uses both Gruyere and Monterey Jack โ€” use half and half for the most accurate copycat.
  • Cooked bacon โ€” cooked until crispy and crumbled into small pieces. Pre-cooked bacon works fine for convenience. Canadian bacon or ham work as alternatives.
  • Salt, pepper, hot sauce โ€” the hot sauce doesn’t make these spicy at all. It adds depth of flavor the same way it does in the original Starbucks recipe. Don’t skip it.

How to Make Starbucks Bacon and Gruyere Egg Bites

  1. Set up your water bath. Place an oven-safe baking dish on the lowest rack of your oven and fill it halfway with hot water. Then preheat the oven to 300ยฐF. This is the technique that makes egg bites silky instead of rubbery โ€” the steam creates a gentle, even cooking environment that mimics a sous vide. Don’t skip this step.
  2. Grease the muffin tin generously. Spray every cup with nonstick cooking spray or brush with butter. Egg bites stick easily โ€” be thorough.
  3. Blend the egg mixture. Add the eggs, cottage cheese, Greek yogurt, shredded Gruyere, salt, pepper, and hot sauce to a blender. Blend on high for 30โ€“60 seconds until completely smooth with no cottage cheese lumps remaining. The blending also incorporates air which helps create that fluffy texture.
  4. Fill and top with bacon. Pour the egg mixture into the prepared muffin cups, filling each about ยพ full. Sprinkle the crumbled bacon evenly over each cup.
  5. Bake for 25โ€“30 minutes. Place the muffin tin on the middle oven rack, directly above the water bath. Bake until the egg bites are just set and beginning to pull away from the edges. They should look slightly puffed โ€” they’ll settle as they cool. Don’t overbake or they’ll lose their silky texture.
  6. Cool before removing. Let the egg bites cool in the pan for at least 5 minutes. Run a butter knife around the edge of each bite to loosen, then gently lift out. Serve warm.

The water bath is non-negotiable. I know it feels like an extra step but it’s the entire reason these taste like Starbucks and not a baked egg muffin. Hot water in the bottom of the oven, muffin tin in the middle โ€” that steam is doing all the work.

Blend until completely smooth. Any lumps of cottage cheese left in the mixture will bake into visible curds in the final egg bite. Blend for the full 30โ€“60 seconds and check before pouring.

Don’t overbake. These should come out of the oven looking slightly underdone in the center โ€” they continue cooking as they cool. Pull them when the edges are set and the center has just a slight jiggle.

Variations

Different cheese โ€” Monterey Jack, Swiss, or a Gruyere/Monterey Jack blend (what Starbucks actually uses) are all excellent.

Red pepper and spinach โ€” skip the bacon and add ยผ cup of diced roasted red peppers and a handful of baby spinach to the batter before baking.

Ham and cheddar โ€” swap the bacon for diced ham and the Gruyere for sharp cheddar.

Vegetarian โ€” omit the bacon entirely and add sautรฉed mushrooms and diced green onions instead.

Spicier version โ€” double the hot sauce and add a pinch of cayenne pepper to the blender.

Storage, Freezing and Reheating

Fridge: Store cooled egg bites in an airtight container in the refrigerator for up to 4 days. They reheat beautifully.

Reheat: Microwave individual egg bites for 30โ€“45 seconds until warmed through. For a slightly crispier exterior, reheat in the air fryer at 350ยฐF for 3โ€“4 minutes.

Freeze: This is where the meal prep magic happens. Freeze cooled egg bites individually on a parchment-lined baking sheet for 1โ€“2 hours, then transfer to a freezer-safe zip-lock bag for up to 3 months. To reheat from frozen: microwave for 60โ€“90 seconds or let thaw in the fridge overnight and microwave for 30 seconds.

Meal prep tip: Make a double batch on Sunday. Refrigerate half for the first 4 days of the week and freeze the rest. Grab-and-go breakfast is handled.

Ingredients 

  • 8 eggs
  • ยพ cup cottage cheese
  • โ…“ cup plain greek yogurt
  • 1 tsp salt
  • 4 strips bacon
  • ยฝ cup gruyere cheese or aged asiago

Instructions

  • Preheat oven to 325F. Spray a silicone muffin tray with non stick cooking spray. Place a baking sheet (approx 16×12″ and something with high enough edges) under the silicone muffin tray and set aside.
  • Using a non stick frying pan, cook the bacon until crisp over medium heat. Transfer to a paper towel and break into little pieces once cooled.
  • In a high power blender, add the eggs, cottage cheese, greek yogurt, and salt. Blend on high for 30-40 seconds.
  • Pour the egg mixture into the 12 silicone cups, then top with grated cheese and bacon. Mix the bacon and cheese around so it’s not all floating to the top.
  • Place the baking sheet & silicone tray in the oven and add water to baking sheet till it’s about halfway full.
  • Bake the eggs on the baking sheet filled with water for 25-30 minutes. CAREFULLY remove from oven (I grabbed the silicone tray with oven mitts and left the baking sheet to cool) and use a knife to cut around the outsides of the egg bites to loosen them from the tray.
  • Close your eyes, pretend you’re at Starbucks, and enjoy them while they’re warm for a fraction of the price!
