WHAT ARE CHOCOLATE CRUNCH BITES?

Chocolate Crunch Bites are tiny, delectable confections that meld the heavenly flavor of chocolate with a variety of crunchy ingredients. They can be made with a range of fillings, such as rice cereal, crushed cookies, pretzels, nuts, or dried fruit. 

The result is a delightful marriage of smooth and creamy chocolate with a satisfying crunch in every bite.

RECIPE INGREDIENTS YOU NEED FOR THE HEALTHY CRUNCH BITES

You will need the following ingredients listed below to make these crunchy bites (the exact measurements, nutrition information and full recipe are in the printable recipe card below):

  • Creamy peanut butter – can use creamy almond butter, cashew butter or sun butter if desired.
  • Honey – can also use pure maple syrup if desired
  • Crispy rice cereal – could also use cornflakes, puffed quinoa, rice cakes, etc.
  • Nut of choice – I used chopped peanuts and chopped almonds.
  • Melted chocolate – can use dark chocolate chips, milk chocolate, white chocolate, cocoa powder mixed with coconut oil. Can also use a chocolate bar instead of chocolate chips if desired.
  • Coconut oil
  • Flaky sea salt
  • Optional – mini chocolate chips for base, vanilla extract, coconut sugar, oat flour, protein powder or plant-based protein, etc.

HOW TO MAKE

  1. To a medium mixing bowl or large bowl, add the melted peanut butter and honey. Combine well. You can also use a food processor, but not necessary.
  2. Add in the crispy rice cereal and the chopped nuts. Can also add mini chocolate chips here if desired.
  3. Line a bread loaf pan with parchment paper and transfer the mixture into it, packing down lightly into a flat layer in the pan.
  4. Put in freezer while you get the chocolate mixture ready.
  5. In a separate bowl, add the chocolate and coconut oil. Melt in 30 second increments in the microwave or use the double boiler method over medium heat.
  6. Remove the bread loaf pan from the freezer and evenly pour melted chocolate over top. Sprinkle with flaky sea salt.
  7. Add to refrigerator for 30-40 mins to set. Cut into 8 bars once set and enjoy!
