In cuisine, “dolce” is often used to describe desserts or sweets, such as “dolce de leche.” For this particular recipe, dolce means the cinnamon flavor combined with the sweet taste of the sugar.
INGREDIENTS FOR THE HOMEMADE CINNAMON SYRUP
You will need the following ingredients listed below to make this cinnamon dolce recipe (the exact measurements and full recipe are in the recipe card at the bottom of this post):
- Filtered water
- White sugar – or white sugar substitute like monk fruit. Can also use powdered sugar or sugar free powdered sugar.
- Brown sugar – or a brown sugar substitute.

HOW TO MAKE THE CINNAMON DOLCE SYRUP RECIPE
One of the things I love most about this recipe is you don’t need any fancy equipment.
Honestly, you pretty much only need a saucepan, stove, and a whisk. Additionally, you need some sort of jar to store the syrup inside.
In a small saucepan, combine the water and, white sugar, brown sugar and vanilla extract and stir until the sugar dissolves.
Add the cinnamon to the saucepan and bring the mixture to a boil over medium-high heat.
Reduce the heat and let the mixture simmer for 5 minutes.
Remove the saucepan from the heat and let it cool at room temperature for 10 minutes.
Pour the mixture into a clean bottle or container. Enjoy with coffee, lattes or cappuccinos.
HOW TO STORE THE SWEET CINNAMON SYRUP
Store the syrup in a mason jar or airtight container in the refrigerator for up to 2 weeks. You may have to give it a shake as the simple syrup can separate slightly and the sugar may sit on the bottom.

Yes, start by brewing your favorite espresso or cold brew coffee. Add your own syrup to cup or glass and pour coffee or shot of espresso over top.
Add your favorite kind of cold milk and then add ice cubes. End with a sprinkle of cinnamon and/or a splash of maple syrup.
Sometimes I add some whipped cream as well if you want it extra indulgent, however that’s not necessary.
