Viral Cottage Cheese Sweet Potato Beef Bowl (38g Protein)
This viral cottage cheese sweet potato beef bowl is made with taco-seasoned ground beef, roasted sweet potatoes, creamy cottage cheese, avocado, and a drizzle of hot honey โ 38 grams of protein per bowl, ready in 30 minutes, and wildly better than it sounds.

TikTok has bad takes sometimes. This is not one of them.
I kept seeing this bowl everywhere and ignoring it because cottage cheese plus sweet potato plus beef sounds like a dare, not a dinner. Then I made it.
Now it’s in my weekly rotation and I genuinely can’t explain why I waited so long. The hot honey drizzle at the end is what ties this whole bizarre, beautiful bowl together โ sweet, spicy, creamy, and savory all happening in one bite.
Make it once. You’ll understand immediately.

Ingredients You’ll Need
(Full measurements are in the recipe card below.)
- Lean ground beef โ 90/93% lean is ideal here. Keeps things light without sacrificing flavor. Ground turkey or ground chicken work as 1:1 swaps โ just season generously since they’re less flavorful than beef.
- Taco seasoning โ a store-bought packet is perfectly fine and keeps this genuinely fast. Want to make your own? Combine 1 tbsp chili powder, 1 tsp cumin, ยฝ tsp paprika, ยฝ tsp garlic powder, ยผ tsp onion powder, salt and pepper.
- Sweet potatoes โ peeled and cubed into roughly ยฝ-inch pieces so they roast evenly and quickly. The natural sweetness is what makes this combination work โ don’t sub regular potatoes.
- Cottage cheese โ full-fat for the creamiest texture. Good Culture is the best brand for this โ higher protein, minimal ingredients, and it doesn’t have that watery texture cheaper brands get. Use it cold straight from the fridge โ warm cottage cheese is not the vibe.
- Avocado โ sliced or cubed. Adds buttery richness and healthy fat. Cut it right before serving so it doesn’t brown.
- Hot honey โ the finishing drizzle that makes the whole bowl make sense. Mike’s Hot Honey is the gold standard. No hot honey? Drizzle regular honey and add a few shakes of hot sauce โ same effect.
- Hot sauce โ optional but recommended. Frank’s RedHot or Cholula both work great here.
- Olive oil, salt, pepper, garlic powder, smoked paprika โ for seasoning the sweet potatoes before roasting.

How to Make the Cottage Cheese Sweet Potato Beef Bowl
- Roast the sweet potatoes. Preheat oven to 425ยฐF. Toss cubed sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on a parchment-lined baking sheet in a single layer โ don’t crowd them or they steam instead of roast. Roast for 20โ25 minutes until golden and fork-tender, flipping halfway. Air fryer method: 400ยฐF for 12โ15 minutes, shaking halfway. Faster and crispier.
- Cook the ground beef. While the sweet potatoes roast, brown the ground beef in a skillet over medium-high heat, breaking it apart as it cooks. Drain any excess fat. Add the taco seasoning and a splash of water โ about 2โ3 tablespoons โ and stir to coat. Simmer for 2โ3 minutes until the seasoning thickens into a sauce around the beef. Don’t skip the water โ it keeps the beef juicy instead of dry.
- Assemble. Add a layer of roasted sweet potatoes to each bowl. Top with a scoop of taco beef, a generous spoonful of cold cottage cheese, and sliced avocado.
- Drizzle and finish. Drizzle hot honey over everything, add a few shakes of hot sauce, and any optional toppings โ green onion, cilantro, chili flakes, black beans, a fried egg.
- Mix before eating. This step is non-negotiable. Stir everything together before the first bite โ the hot beef, cold cottage cheese, creamy avocado, and spicy-sweet honey combine into something genuinely unreal. It tastes completely different mixed versus eaten in separate bites.
Tips: Add a splash of water when cooking the taco beef โ it creates a sauce that keeps everything juicy and flavorful instead of dry and crumbly. Use an air fryer for the sweet potatoes if you have one โ you get crispier edges in less time and they taste better. Serve the cottage cheese cold straight from the fridge โ warm cottage cheese loses its texture and gets watery.
Variations
- Ground turkey or chicken โ a leaner swap. Season well since they have less natural flavor than beef.
- Fried egg on top โ add a fried egg for extra protein and a runny yolk that doubles as a sauce.
- Black beans โ stir a can of drained black beans into the beef for extra fiber and protein.
- Greek yogurt instead of cottage cheese โ a smoother, tangier alternative. Same protein benefit.
- Extra spicy โ add sliced jalapeรฑos, pickled red onions, or a spoonful of chili crisp on top.
- Whole30 version โ skip the hot honey and use compliant taco seasoning. The bowl still works beautifully with just hot sauce and avocado.

Meal Prep and Storage
Meal prep: This bowl is one of the best meal prep dinners on the blog. Make a full batch of beef and sweet potatoes on Sunday โ they reheat perfectly. Store the cottage cheese and avocado separately and add them fresh when assembling. This keeps the texture of everything exactly right.
Fridge: Store the cooked beef and roasted sweet potatoes together in an airtight container for up to 4 days. Keep cottage cheese in its original container. Slice avocado fresh each time โ it browns too quickly to store cut.
Freezer: The beef and sweet potatoes both freeze well for up to 3 months. Thaw overnight in the fridge and reheat in the microwave or a skillet. Never freeze cottage cheese or avocado.
Reheating: Microwave the beef and sweet potatoes for 60โ90 seconds. Assemble the bowl fresh with cold cottage cheese and sliced avocado. Add the hot honey after reheating, not before.
