Cottage Cheese Flatbread (31g Protein, No Flour)
This cottage cheese flatbread is a flourless, gluten-free flatbread made with cottage cheese, eggs, garlic powder, and Italian seasoning โ baked until golden, flexible, and packed with 31 grams of protein. Ready in 40 minutes with 5 minutes of actual work.

TikTok sent this one into orbit and for once the algorithm was right about something.
This cottage cheese flatbread has no flour, no yeast, and no carb guilt. Just cottage cheese, eggs, and a handful of seasonings blended smooth and baked until golden.
It comes out flexible enough to fold into a wrap, sturdy enough to hold all your sandwich toppings, and sturdy enough to use as a pizza base if you’re feeling ambitious. Thirty-one grams of protein. Five minutes of work. I’ve made this at least twenty times and I’m still not tired of it.

Ingredients You’ll Need

- Cottage cheese โ full-fat is the move here. Full-fat cottage cheese has more fat which helps the flatbread hold together and gives a richer, more satisfying texture. Low-fat versions work but can turn out floppier and more fragile. Drain the excess liquid before blending โ too much liquid and the flatbread won’t set properly. Exception: if you’re using Good Culture brand, it’s thick enough that you can skip the draining step.
- Eggs โ the binder. Whole eggs give the best structure and a richer flavor. Egg whites work if you want to lower the fat โ use about โ cup and expect a slightly paler, lighter result.
- Garlic powder โ seasons the flatbread itself so it doesn’t taste like plain egg. Don’t skip the seasoning โ an unseasoned flatbread is bland no matter what you put on it.
- Italian seasoning โ adds an herby, savory depth that pairs with basically every topping combination.
- Salt and black pepper โ season generously. The flatbread base is mild and needs salt to taste good on its own.
How to Make Cottage Cheese Flatbread
- Preheat oven to 350ยฐF. Line a baking sheet with parchment paper and spray generously with non-stick cooking spray.
- Drain the cottage cheese. Pour the cottage cheese into a fine mesh sieve or push the curds to one side and tip out any pooled liquid. Too much liquid = wet, floppy flatbread.
- Blend until smooth. Add the drained cottage cheese, eggs, garlic powder, Italian seasoning, salt, and pepper to a blender or food processor. Blend until completely smooth โ no cottage cheese curds remaining. This should take about 30โ45 seconds.
- Pour and spread. Pour the mixture onto the prepared baking sheet and spread evenly with a spatula. Aim for about ยฝ inch thick for a flexible, foldable flatbread. Thinner = crispier. Thicker = more bread-like but needs more time.
- Bake for 35โ40 minutes until the top is golden brown and the edges are set. Most recipes say 30 minutes โ I’ve tested this extensively and 35 minutes is the minimum for a flatbread that holds together properly. At 30 minutes it’s often still too soft.
- Cool completely before touching it. This step is non-negotiable. Leave it on the pan for at least 10 minutes โ it continues to firm up significantly as it cools. Try to move it before it cools and it will tear. Set a timer and walk away.
Drain the cottage cheese first. Excess liquid in the blended mixture is the most common reason cottage cheese flatbread comes out wet and floppy. Drain before blending every time.
Cool completely before removing from the pan. This is the step everyone skips and then wonders why their flatbread fell apart. Ten full minutes minimum. It firms up dramatically as it cools.
Thinner = crispier, thicker = more flexible. If you want crispy flatbread chips, spread it very thin and bake an extra 5โ10 minutes. If you want a wrap you can fold without cracking, keep it at ยฝ inch and don’t overbake.

How to Use Cottage Cheese Flatbread
This is the part that makes it worth making every week:
- Sandwich wrap โ lay your fillings on one half and fold over. Turkey, spinach, avocado, tomato, and mustard is the classic. Any sandwich filling works.
- Pizza base โ bake the flatbread for 30 minutes, add your sauce, cheese, and toppings, then return to the oven for 10โ15 more minutes. Crispier than a regular pizza, more protein than a regular crust.
- Breakfast wrap โ scrambled eggs, cheddar, hot sauce, and avocado folded inside.
- Snack โ straight off the pan with a sprinkle of sea salt and a drizzle of olive oil. Genuinely excellent.
- Cut into strips โ serve with hummus or guacamole as a high-protein dipper.

Flavor Variations
The base recipe is savory and versatile โ here’s how to change it up:
- Everything Bagel โ replace Italian seasoning with Everything But the Bagel seasoning. Excellent for a cream cheese and lox situation.
- Spicy โ add a pinch of cayenne and smoked paprika to the blend.
- Herb forward โ add fresh chopped chives or rosemary into the blender. Fresh herbs throughout the flatbread are very good.
- Onion powder โ add ยฝ tsp alongside the garlic powder for a more savory, complex base.
Storage and Freezing
Fridge: Store cooled flatbread in an airtight container with parchment paper between layers for up to 4โ5 days. Reheat in the air fryer at 350ยฐF for 3โ4 minutes or in a dry skillet to get the texture back.
Freezer: This is where the meal prep magic happens. Let the flatbread cool completely, wrap individually in plastic wrap, and store in a freezer bag for up to 2 months. To reheat: toast directly from frozen in a toaster oven or air fryer at 350ยฐF for 4โ5 minutes.
Do not microwave โ it makes the flatbread soft and rubbery. Air fryer or toaster oven only for reheating.
Cottage Cheese Flatbread (Viral Recipe)
Ingredients
- 1 cup full-fat cottage cheese excess liquid drained
- 2 whole eggs
- ยฝ tsp garlic powder
- ยฝ tsp italian seasoning
- ยฝ tsp black pepper
- pinch of salt
- Toppings of choice for sandwich – I used light mayo mustard, turkey breast, tomato slices, avocado slices, and spinach.
Instructions
- Preheat your oven to 350 degrees F.
- In a blender, add the cottage cheese (excess liquid drained), eggs, garlic powder, Italian seasoning, and a good pinch of salt and pepper until well combined. You can also use an immersion blender for this step, or a food processor.
- Spray a parchment lined baking sheet with non-stick cooking spray, then pour the cottage cheese mixture on. Spread it out evenly. You do not want it too thin, try to leave it about 1/2 inch thick.
- Bake in the oven for 35 to 40 minutes or until the flat bread has turned a golden brown color.
- Let cool for 10 minutes, until it has firmed up. This is very important as it will break apart if you remove it before it cools completely.
- Then top with your favorite toppings. I used light mayo, mustard, turkey, tomato, spinach, and avocado.

No, the key is allowing it enough time to really cool off! Once it’s cool it comes off nicely, and is firm enough that it won’t fall apart. If it’s still stuck you can run something underneath to loosen it from the parchment paper. I hope this helps!!

I made the recipe as shown but used a creole seasoning instead of all the other spices. I used the WalMart Great Value 4% cottage cheese. It is dryer than other brands that I use. Baked up witha beautiful golden brown and released from the parchment paper by just lifting it with my fingers. I only baked it for 25 minutes. After turning it over, I put it back in the oven as it cooled for another 10 minutes to allow for additional reduction of moisture. The flavor was surprising. Very tasty for a low carb “bread”. The egg flavor was dominated by a combination of the browning as well as the spice.

Nice recipe. My first try and it turned out great. Used some different seasonings. No trouble with the sticking to the paper. I wonder how easy this would be to freeze? Anyone know?
Yes, you can freeze it. I place either wax paper or parchment between layers and freeze in a freezer zip baggie. You can thaw quick in the microwave or on the counter and then microwave for a few seconds to restore it to it’s original texture. Yummy!!

I made this the other day. It’s fantastic. I shredded some cheddar and used “everything bagel” seasoning. I think I would probably bake a bit longer to get it even more crispy. It’s a real treat! I happened to leave the small piece leftover on a plate on the counter and it was even more crispy the following day.
This is awesome recipe! I’ve made it multiple times. I used it for pizza crust. Added tons of toppings and broiled it about 7-10 minutes depending on how much toppings I added. It’s taste amazing! We don’t miss pizza crust at all! Highly recommend to anyone who is limiting carbs.
