You know when TikTok sends a recipe into orbit and suddenly everyoneโ€™s blending cottage cheese like itโ€™s their full-time job? Yeahโ€ฆ this is one of those.

But spoiler alert: it actually lives up to the hype.

This cottage cheese flatbread is protein-packed, low-carb, and so dang versatile youโ€™ll start wondering why you ever bothered with store-bought wraps.

Sandwich? Check. Breakfast pizza? Yup. Eaten straight off the pan with a little sea salt? Been there. No regrets.

So letโ€™s get into it โ€” because once you make this, your snack game will never be the same.

SIMPLE INGREDIENTS YOU NEED FOR THE COTTAGE CHEESE FLATBREAD RECIPE

You will need the following ingredients listed below to make these flatbread recipe (the exact measurements, nutritional value and full recipe are in the printable recipe card at the bottom of this post):

  • Cottage cheese – a cup of cottage cheese is all you need. Full-fat cottage cheese is best.
  • Large eggs – can also use egg whites
  • Garlic powder
  • Italian seasoning
  • Salt
  • Black pepper
  • Optional – fresh herbs, onion powder, flaxseed, gluten-free flour, cheddar cheese, whole large eggs, olive oil, etc.

HOW TO MAKE THE COTTAGE CHEESE FLATBREAD

  1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a blender, add the cottage cheese (excess liquid drained), eggs, garlic powder, Italian seasoning, and a good pinch of salt and pepper until well combined. You can also use an immersion blender for this step, or a food processor.
  3. Spray your parchment-lined baking sheet with non-stick cooking spray, then pour the cottage cheese mixture on. Spread it out evenly. You do not want it too thin, try to leave it about 1/2 inch thick.
  4. Bake in the oven for 35 to 40 minutes or until the flat bread has turned a golden brown color. Some recipes call for 30-35 minutes, however I have found 30 minutes too short.
  5. Let cool for 10 minutes, until it has firmed up. This is very important as it will break apart if you remove it before it cools completely. Then top with your favorite toppings. I used light mayo, mustard, turkey, tomato, spinach, and avocado.

TIPS AND TRICKS FOR BEST RESULTS

  • Experiment with Flavors: Feel free to throw in extra seasonings or herbs into the mix. Things like rosemary, thyme, or even a pinch of cayenne can add a whole new dimension.
  • Get Creative with Toppings: After cooking, top it with anything from avocado slices and smoked salmon to a simple spread of hummus.
  • Making in Advance?: You can make the low carb flatbread ahead of time and store it in the fridge, covered, for when you need it. However, it is much better made fresh.

      I made this exactly like the recipe, and it stuck to the Parchment paper! Bad, I had to thriw it out. Do you need to spray the paper?

        No, the key is allowing it enough time to really cool off! Once it’s cool it comes off nicely, and is firm enough that it won’t fall apart. If it’s still stuck you can run something underneath to loosen it from the parchment paper. I hope this helps!!

    8. I made the recipe as shown but used a creole seasoning instead of all the other spices. I used the WalMart Great Value 4% cottage cheese. It is dryer than other brands that I use. Baked up witha beautiful golden brown and released from the parchment paper by just lifting it with my fingers. I only baked it for 25 minutes. After turning it over, I put it back in the oven as it cooled for another 10 minutes to allow for additional reduction of moisture. The flavor was surprising. Very tasty for a low carb “bread”. The egg flavor was dominated by a combination of the browning as well as the spice.

    12. Nice recipe. My first try and it turned out great. Used some different seasonings. No trouble with the sticking to the paper. I wonder how easy this would be to freeze? Anyone know?

      1. Yes, you can freeze it. I place either wax paper or parchment between layers and freeze in a freezer zip baggie. You can thaw quick in the microwave or on the counter and then microwave for a few seconds to restore it to it’s original texture. Yummy!!

    14. I made this the other day. It’s fantastic. I shredded some cheddar and used “everything bagel” seasoning. I think I would probably bake a bit longer to get it even more crispy. It’s a real treat! I happened to leave the small piece leftover on a plate on the counter and it was even more crispy the following day.
