SIMPLE INGREDIENTS YOU NEED FOR THE COTTAGE CHEESE BREAD RECIPE

  • Cottage cheese
  • Egg whites
  • Garlic powder
  • Italian seasoning
  • Salt
  • Black pepper
  • Optional – fresh herbs, flaxseed, gluten-free flour, whole large eggs, olive oil, etc.

HOW TO MAKE

  1. Preheat your oven to 350 degrees F.
  2. In a blender, add the cottage cheese (excess liquid drained), egg whites, garlic powder, Italian seasoning, and a good pinch of salt and pepper until well combined. It’s not completely necessary to blend everything, however it does results in a more even flatbread. Additionally, you can also use an immersion blender for this step, or a food processor.
  3. Pour the cottage cheese mixture onto a parchment lined baking sheet and spread it out evenly. You do not want it too thin, try to leave it about 1/2 inch thick.
  4. Bake in the oven for 35 to 40 minutes or until the flat bread has turned a golden brown color.
  5. Let cool for 5-10 minutes, until it has firmed up slightly. Then top with your favorite toppings. I used light mayo, mustard, turkey, tomato, spinach, and avocado.

CAN I MAKE THIS RECIPE IN AN AIR FRYER OR TOASTER OVEN?

Yes, absolutely. As long as your air fryer has a tray or flat surface you can add the cottage cheese mixture on, this will work perfectly fine. 

You may however have to adjust cooking time. 

WHAT SHOULD I DO IF MY DOUGH IS TOO WET?

If it’s too wet and sticky, add 1 tbsp of gluten-free flour.

CAN I USE DIFFERENT TOPPINGS FOR THE FLATBREAD?

Can use 2 whole eggs in place of egg whites.

    I made this exactly like the recipe, and it stuck to the Parchment paper! Bad, I had to thriw it out. Do you need to spray the paper?

      No, the key is allowing it enough time to really cool off! Once it’s cool it comes off nicely, and is firm enough that it won’t fall apart. If it’s still stuck you can run something underneath to loosen it from the parchment paper. I hope this helps!!
