INGREDIENTS YOU NEED FOR THE EGGNOG BAKED OATS

You will need the following ingredients listed below to make this eggnog oatmeal recipe (the exact measurements, nutrition information and full recipe are in the printable recipe card below):

  • gluten-free oats – quick oats blend up a bit easier but you can also use old-fashioned oats. Do not use steel cut oats in this recipe.
  • baking powder – gives the mixture a slight rise and that perfect fluffy cake-like texture.
  • Whey Protein powder – My favourite type of protein powder is PEScience vanilla protein powder and you can use code BAILEY at checkout for a special deal on all their products! They have really good vegan protein powder and chocolate protein powder.
  • dairy-free eggnog – regular leftover eggnog of any type will work.
  • unsweetened almond milk – any non-dairy milk or regular milk will work. We add some to the batter and then some more for pouring over the oats once baked.
  • vanilla extract – use real vanilla extract for the best flavor.
  • ground cinnamon
  • pure maple syrup – to add some sweetness to this warm breakfast
  • egg – could substitute for a flax egg or chia seeds but will not be as fluffy as whole eggs.
  • plain greek yogurt – or coconut yogurt for dairy free.
  • sweetener of choice – powdered sugar or sugar-free powdered sugar such as Swerve Sweetie.
  • extra eggnog for the icing
  • optional – peanut butter, cashew butter, or almond butter drizzle for some healthy fats, pure maple syrup or white sugar if you’ve got a sweet tooth, greek yogurt, or even potentially fresh fruit. Whipped cream would also make a great topping or eggnog ice cream to get super indulgent.

HOW TO MAKE

  1. Preheat oven to 350 degrees F. Grease small oven safe baking dish with cooking spray or softened butter.
  2. Blend your oats on high to create a fine powder. Then add all remaining wet and dry ingredients and blend till combined.
  3. Pour into the greased oven safe dish and bake in preheated oven for 25-30 minutes or until golden brown. 
  4. Top with icing, cinnamon, and nutmeg. Enjoy!
