INGREDIENTS FOR THIS PERFECT DESSERT
You will need the following ingredients listed below to make this truffle mixture (the exact measurements and full recipe are in the recipe card at the bottom of this post):
- Biscoff Spread – Lotus Biscoff Cookie Butter is the irresistible, spreadable treat made from Lotus Biscoff Cookies. This can be found in most grocery stores or on Amazon.
- Biscoff Cookies – these will end up being pulsed in a food processor to create crumbs. If you cannot find these anywhere, graham crackers crushed into crumbs will do.
- Cream Cheese – can use dairy free cream cheese to make these vegan. I recommend using full fat Philadelphia if you can.
- Chocolate – can use dairy free chocolate for vegan truffles. Could also use dark chocolate, milk chocolate, creamy white chocolate or cocoa powder mixed with coconut oil if desired.
HOW TO MAKE HOMEMADE CHOCOLATE TRUFFLES
Line a large baking sheet with parchment paper or wax paper and set aside.
In a medium bowl, combine the biscoff spread, biscoff cookie crumbs, and cream cheese. Mix until smooth.
Shape into 10 balls. Add to cookie sheet and place in freezer for 15-20 minutes to firm up, or in refrigerator for 30 minutes.
Melt chocolate or melt chocolate chips in microwave-safe bowl in 30 second increments. Or melt using the double boiler method using a bowl and the top of a saucepan over the stove.
Using a few forks or spoons, dunk each ball into the melted chocolate, making sure all sides are covered. Add more biscoff cookie crumbs to top of balls.
Add back to freezer for another 10 minutes for chocolate to set, or in the refrigerator for 30 minutes.
Store little truffles in an airtight container in the refrigerator.
STORING AND FREEZING THIS SIMPLE HOLIDAY TREAT
Store these in the fridge in an airtight container. They will melt slightly if not stored in the refrigerator.
Or wrap them up and give as gifts for Christmas, Valentine’s Day, birthdays, or thank you presents to friends and family who live in your area.
This easy chocolate truffles recipe is perfect for making ahead and storing in the freezer. Follow the instructions and transfer to an freezer bag or airtight container and freeze for up to 3 months.
When ready to serve, it’s a great idea to let them thaw in the refrigerator before serving.
DIFFERENT FLAVOR IDEAS
As much as I love a good old chocolate coating, there are many other flavors of truffles you can try.
Some of my other favorite flavors are sugar cookie truffles, white chocolate raspberry truffles, or boozy Christmas chocolate truffles. These flavours are all perfect for the holiday season.
Red velvet cake truffles, or something similar like snowman oreo balls would be delicious for any time of year.
Adding pumpkin spice to your batter and using white candy melts will results in a pumpkin spice truffle recipe. These would be perfect for Thanksgiving or Halloween.
VEGAN CREAMY TRUFFLES
This recipe is vegan as long as the chocolate coating that’s used is plant based. If you aren’t worried about making them vegan than you can opt for regular chocolate.
You can find most of the ingredients in the baking aisle, and they are all very affordable. Just because these are vegan does not mean they follow a low calorie diet, so just be aware of that.
TIPS FOR MAKING THE BEST TRUFFLES FOR THE FESTIVE SEASON
- Make sure you freeze the truffles for long enough before adding the chocolate coating. The longer they are frozen, the easier the chocolate layer will go on.
- If you want your truffles smooth on the inside, blend the cookies until they have very fine crumbs. Alternatively, if you like a bit of a crunch here and there don’t blend for as long.
- If you choose to melt the chocolate layer in the microwave, ensure you are doing it in 30 second increments. If you microwave your chocolate for too long at a time it can begin to bake it and it will be incredibly hard to use.
