This truly is the best best banana bread mix I’ve ever tasted. As a Food Blogger, I’m constantly trying new products that come on the market. I have tried countless boxed pancake, waffle, cake, and muffin mixes. You can definitely get your hands on some good ones, but it’s rare to come across ones that are vegan, gluten free, nut free and THIS good! This is hands down the best healthy vegan banana bread I’ve ever tasted.
The best part about this eggless banana bread is it only requires one bowl, no fancy mixer, and only 5 ingredients. You also get the best of both worlds because these mixes are tasty enough to feel like dessert, but healthy enough to eat for breakfast.
If you want to spice up the one bowl banana bread you can toss in a cup of chopped nuts, chocolate chips, or raisins. You can also make this mix into banana bread muffins, which is what I’ve done.
Other Banana Bread Ingredients You Need Besides The Mix
- Bananas: The more ripe the better. It states on the packaging that you may only need 2 bananas depending on the ripeness of the bananas.
- Maple syrup or honey: If you want to keep this recipe vegan, use the maple syrup. However if that is not a concern of yours, honey works perfectly fine!
- Oil or Yogurt: I used oil in my recipe as that’s what I had on hand. For a lower fat option, yogurt works great. It adds even more moisture to this banana bread. I like to use yogurt as much as possible when I’m baking. Sour cream is a wonderful substitution for plain yogurt. You can use the two interchangeably in most baking recipes.
- Milk: Any plant milk with be great in this vegan chocolate banana bread. I used almond milk, but other milks like oat milk, soy milk, cashew milk, or regular cows milk will all work.
How To Mash Bananas For This Gluten Free Banana Bread Recipe
This trick I love to use when I’m in a pinch for time or feeling lazy – using your electric mixer to mash bananas. Break apart the bananas into 2 or 3 pieces and add to a regular mixing bowl and your hand mixer. Beat on low and gradually increase speed to high as the bananas begin to break down.
An alternative way, and how most people mash them bananas is with fork on a plate.
