So this is the recipe that kind of took off for me. I posted it, the internet ran with it, and then Parade actually tested it and credited me by name, which was a very weird and very cool thing to wake up to.

All it is, is two tortillas, butter, cheese, and a couple of pantry shakes. That’s it.

Air fryer tortilla garlic bread is two flour tortillas spread with butter, loaded with mozzarella, garlic powder, and Italian seasoning, stacked, and air fried until the edges go crispy and the cheese melts into the middle. You get the crunch and the garlic-butter pull of real garlic bread in about 10 minutes, no oven preheat, no loaf required.

Each one lands around 25g of protein, which is not nothing for something that eats like cheesy comfort food.

I make this on the nights I want something warm and a little bit bad for me but actually don’t want to cook. It pairs with pasta, it pairs with soup, it pairs with absolutely nothing but a bowl of marinara and me on the couch.

  • Garlic powder โ€” the garlic-bread backbone. I use powder over fresh here so it spreads evenly and doesn’t burn in the air fryer.
  • Italian seasoning โ€” that oregano-and-basil pizzeria note. Dried oregano on its own works in a pinch.

How To Make Air Fryer Tortilla Garlic Bread

  1. Lay your tortillas flat on a clean surface. Spread softened butter over each one, all the way to the edges. The edges are where the crisp happens, so don’t skip them.
  2. Sprinkle grated mozzarella, garlic powder, and Italian seasoning over both buttered tortillas. Stack one on top of the other so you’ve got a cheesy sandwich.
  3. Preheat the air fryer to 375ยฐF. Place the stacked tortillas in the basket in a single layer and air fry for 4 to 6 minutes. Watch the last minute, it goes from golden to too-far fast.
  4. Pull it the second the edges are deep golden and crispy and the cheese is melted through.
  5. Let it cool a minute, then slice it like a pizza. Serve warm with marinara, ranch, or whatever you’re dipping in tonight.

Tips For The Crispiest Garlic Bread

The butter is doing two jobs, flavor and crisp, so spread it edge to edge and don’t go light. Keep your stack in a single layer with no overlap so the hot air hits every part evenly. And a pizza cutter slices it into clean wedges way better than a knife drags through melted cheese.

Variations And Substitutions

Swap the mozzarella for cheddar, pepper jack, provolone, or a Mexican blend, or do a combo of whatever’s in the drawer.

Mix red pepper flakes or fresh herbs straight into the butter for more punch.

Add sliced jalapeรฑos, cooked bacon, or leftover shredded chicken between the tortillas to turn a snack into a meal.

For a lighter spread, brush the tortillas with olive oil and minced garlic instead of butter.

How To Store And Reheat

This is best fresh and warm, that’s when the crisp is unreal. If you’ve got leftovers, let them cool fully, then wrap each piece in foil or stash them in an airtight container in the fridge for 2 to 3 days.

To bring the crunch back, reheat in the air fryer at 350ยฐF for 1 to 2 minutes. The microwave works but you’ll lose the crisp, so air fryer every time.

Can I use corn tortillas instead of flour tortillas?

Yes. Corn tortillas crisp up a little differently and come out a bit more rigid, but they work and they make this naturally gluten-free if your cheese is too.

Can I freeze tortilla garlic bread?

You can, but I don’t love it. Freezing softens that crispy texture once you thaw and reheat. If you do, wrap pieces tightly and freeze flat, then reheat straight from frozen in the air fryer for 2 to 3 minutes.

Can I make this without an air fryer?

Yes, the oven works. Bake the stacked tortillas at 400ยฐF for 6 to 8 minutes, then broil for 1 to 2 minutes to crisp the top. Keep a close eye during the broil.

What dipping sauces go with tortilla garlic bread?

Marinara is the classic. Ranch, garlic aioli, pizza sauce, or even a balsamic drizzle all work depending on what you’re in the mood for.

Is this tortilla garlic bread gluten-free?

Not as written, since flour tortillas contain gluten. Swap in corn or certified gluten-free tortillas and double-check your cheese, and you’ve got a gluten-free version.

  • 2 flour tortilla shells
  • 1 tbsp butter

  3. This was delicious! Can I assemble these the night before a function and cook them in the air fryer the next day?

    1. So glad you loved it!! Yes you can totally prep these ahead. Assemble them, then wrap each one tight or pop them in an airtight container so the tortillas don’t dry out, and keep them in the fridge overnight. Pull them out, air fry the next day, and you’re good to go.

      One little heads up: the tortillas can soften a bit sitting with the butter and cheese overnight, so they may not crisp up quite as much as a fresh batch. If you want max crunch for your function, you could prep all your filling and garlic butter ahead and just do the final assembly right before they go in the air fryer. Either way they’ll still taste so good!

    Here’s what I do: I preheat the air fryer as I’m assembling the tortilla. Once the air fryer has preheated, I put the tortilla in the air fryer, but I don’t start the air fryer right away. I let it set in there for about 2 minutes. and then start the air fryer. By leaving it in the air fryer for that 2 minutes before starting the air fryer, it partially melts the cheese so it doesn’t fly off when you do start the cooking process. Hope that helps!

    1. Ohhh I love this!! That little 2-minute rest in the preheated basket is so smart, you’re basically pre-melting the cheese so it acts like glue before the fan ever kicks on.

  7. Tried this today. We loved it! I served it as a quick lunch with marinara sauce. I substituted Penzeyโ€™s Pizza Seasoning instead of Italian seasoning. The ingredient possibilities are endless on this recipe. Could easily make it with Mexican shredded cheese, fajita seasoning and serve with jalapeรฑos and salsa. Thanks for sharing!!!

    These taste so good but my top tortilla keeps folding while in the air fryer. Do you know how to keep that from happening?

    1. Ahh so happy you love them!! Okay so the folding thing is just your air fryer fan being a little too excited. The top tortilla is super light so the airflow catches it and flips it right up on you.

      Three things that fix it: stick a toothpick straight through the middle to pin the top tortilla down before it goes in, pile your cheese in the center so it melts and basically glues the two tortillas together, and press the edges firmly so they seal. I do the toothpick every single time now and it stays put. Just pull it out before you take a bite!
