Mint Chocolate Overnight Oats (Thin Mint + Chocolate Shell)
These mint chocolate overnight oats taste like a Thin Mint cookie, made with chocolate protein powder and finished with a dark chocolate shell you crack with your spoon.

Mint chocolate overnight oats are oats soaked overnight with almond milk, chia seeds, cocoa powder, chocolate protein powder, and a few drops of peppermint extract. This version gets a layer of melted dark chocolate and coconut oil on top, then 10 minutes in the freezer so it sets into a crackable shell.
It’s the same freeze-and-crack shell as my Snickers Overnight Oats, just mint chocolate. Ready and waiting when you wake up, which is the whole point on a busy morning, and fun enough for Christmas morning too.

Ingredients for Mint Chocolate Overnight Oats
For the oats
- Certified gluten-free oats: quick or old-fashioned both work. Skip steel-cut, they stay chewy.
- Unsweetened almond milk: I like it because the flavor stays neutral, but cashew, coconut, oat, soy, or regular milk all work.
- Chia seeds: soak up the liquid so the oats set thick, plus healthy fats.
- Chocolate protein powder: I use PEScience Chocolate Mint Cookie (code BAILEY saves you money). It tastes like fresh mint chocolate, so it does half the flavor work. They have vegan options too.
- Unsweetened cocoa or cacao powder: for deep chocolate flavor.
- Pure peppermint extract: just a few drops. It’s strong, so don’t overdo it.
For the chocolate shell
- Dark chocolate chips and coconut oil: melted together and poured over the chilled oats. The coconut oil is what makes it set into a thin, snappy shell. Milk chocolate or a vegan brand works too.
- To finish: crushed Thin Mints or Oreo pieces and a fresh mint leaf.
Optional add-ins: maple syrup, flax or hemp seeds, cacao nibs, vanilla extract, a spoonful of plain Greek yogurt, or an extra scoop of protein.

How to Make Mint Chocolate Overnight Oats
- Add the oats, almond milk, chia seeds, protein powder, cocoa powder, and peppermint extract to a jar or bowl and stir well.
- Cover and refrigerate for at least 4 hours or overnight.
- Microwave the chocolate chips and coconut oil until melted.
- Pour the melted chocolate over the chilled oats and spread it to cover the top.
- Sprinkle with crushed cookies.
- Freeze for about 10 minutes, until the chocolate sets.
- Crack it open with your spoon.

How to Store Mint Chocolate Overnight Oats
Keep leftovers in an airtight glass jar or container in the fridge for 3 to 4 days, and label it with the date you made it. A wide-mouth mason jar is the easiest for one serving. For batch prep, meal-prep containers work best, or use a bowl if you like to warm your oats up in the morning.
