  • gluten-free oat flour – can make oat flour by blending oats in high powered blender or food processor – can also use almond flour
  • baking powder
  • cinnamon
  • pinch of salt
  • coconut oil – can also use vegan butter or almond butter
  • brown sugar –  coconut sugar also works well here
  • pure maple syrup
  • large eggs
  • vanilla extract
  • unsweetened almond milk
  • dark chocolate chips – can also use chocolate chunks or dairy-free chocolate chips

HOW TO MAKE THESE HEALTHY OATMEAL BARS

  1. Preheat your oven to 350 degrees F and grease a 8×8″ baking pan.
  2. In a large bowl, whisk together the gluten-free oats, gluten-free oat flour, baking powder, cinnamon and salt. Set aside.
  3. In a large mixing bowl, combine the melted coconut oil, brown sugar, and maple syrup. Mix until well combined.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and almond milk.
  5. Gradually add the dry ingredients to the wet ingredients, mixing at a medium speed or until just combined. Fold in chocolate chips.
  6. Pour the batter evenly into the prepared baking pan.
  7. Bake in the preheated oven for 22-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs (but not wet).
