Crispy Air Fryer Chicken Burgers

Juicy chicken breasts coated in seasoned panko and air fried until golden. Crispy outside, tender inside, and ready in under 30 minutes โ€” the easy homemade alternative to a Chick-fil-A drive-thru.

Crispy air fryer chicken burgers are made by breading whole chicken breasts in flour, egg, and seasoned panko, then air frying at 400ยฐF until crispy and juicy. Each burger has 43g of protein, takes 26 minutes total, and uses way less oil than deep-frying.

This is my go-to weeknight chicken sandwich. The breading-and-air-frying combo gives you that crispy fast-food texture without the grease, and you can customize toppings depending on the mood โ€” classic lettuce-tomato-mayo, buffalo style, copycat Chick-fil-A with pickles, or full-on melty cheese.

Ingredients You’ll Need

(Full measurements in the recipe card at the bottom of the post.)

  • Chicken breasts โ€” boneless, skinless. If they’re thick, butterfly or pound them slightly so they cook evenly without drying out. Ground chicken works too โ€” just shape into patties before breading.
  • All-purpose flour โ€” for the first dredging station. Gluten-free flour or almond flour work as 1:1 swaps.
  • Egg โ€” beaten, for the second station. This is what makes the breading stick.
  • Panko breadcrumbs โ€” use panko, not regular breadcrumbs. Panko is coarser and gives you a much crispier crust. Gluten-free panko works.
  • Garlic powder, onion powder, paprika, lemon pepper, Italian seasoning โ€” your seasoning blend. Mix all five into the panko before breading.
  • Salt and pepper โ€” to taste.
  • Hamburger buns โ€” brioche, sesame, or gluten-free all work.
  • Toppings โ€” lettuce, tomato, red onion, pickles, mayo, cheese, buffalo sauce, BBQ sauce, dijon, honey mustard โ€” whatever you’re craving.

How to Make Crispy Air Fryer Chicken Burgers

  1. Set up 3 breading stations. In bowl 1, the flour. In bowl 2, the beaten egg. In bowl 3, the panko mixed with all the seasonings.
  2. Bread the chicken. Press each chicken breast into the flour and shake off the excess. Dip into the egg. Press firmly into the panko crumbs, coating both sides completely. Don’t rush this โ€” press the breading into the chicken so it sticks.
  3. Preheat the air fryer to 400ยฐF. Lightly spray the basket with oil.
  4. Air fry. Place breaded chicken in the basket in a single layer, not touching. Cook 9 minutes on one side, flip, then cook another 7-8 minutes until the internal temperature reaches 165ยฐF. Cook in batches if your air fryer is small.
  5. Toast the buns (optional). Pop the buns in the air fryer for 1-2 minutes until golden.
  6. Assemble. Place the chicken on each bun and load with your favorite toppings. Serve immediately.

Tips for the Crispiest, Juiciest Chicken

  1. Pound thick breasts to even thickness. A chicken breast that’s 1.5 inches thick on one end and ยฝ inch on the other will dry out at the thin end before the thick end is cooked through. Pound to about ยพ inch even thickness with the flat side of a meat tenderizer.
  2. Press the breading in firmly. Loose breading falls off in the air fryer. Press the panko into the chicken with the back of your hand so it really sticks.
  3. Don’t overcrowd the basket. Single layer, no touching. This is what makes the breading crisp instead of steam.
  4. Use a meat thermometer. Air fryers vary wildly. Pull at 165ยฐF at the thickest part โ€” guessing is the #1 cause of dry chicken.
  5. Try the pickle juice trick. Soak the chicken in pickle juice for 30 minutes before breading (like Chick-fil-A does). The acid tenderizes the chicken and adds a subtle tangy flavor that’s hard to place but addictive. A reader pickle juice tip that’s become my favorite variation.
  6. Light spray of oil on the breading before air frying gives you that golden-brown deep-fried look without actually deep frying.

Topping & Sauce Variations

  • Classic: Lettuce, tomato, red onion, mayo on a toasted bun
  • Copycat Chick-fil-A: Pickle juice marinade, pickles on the burger, honey mustard
  • Buffalo: Toss the cooked chicken in buffalo sauce + top with blue cheese dressing and shredded lettuce
  • Spicy: Hot honey drizzle + pepper jack cheese + jalapeรฑos
  • Caprese: Fresh mozzarella + sliced tomato + basil + balsamic glaze
  • Bacon ranch: Crispy bacon + ranch + cheddar + lettuce + tomato
  • Low-carb: Skip the bun and wrap in butter lettuce, or serve over a salad

What to Serve With Chicken Burgers

How to Store and Reheat

  • Fridge: Store leftover chicken patties in an airtight container in the fridge for up to 3 days. Store the buns and toppings separately so nothing gets soggy.
  • Reheat in the air fryer at 375ยฐF for 5-7 minutes โ€” the only reheat method that keeps the breading crispy. Microwave will make it rubbery.
  • Freezer: Cool patties completely, then freeze in a single layer before transferring to a freezer-safe bag. Keep up to 3 months. Reheat from frozen in the air fryer at 375ยฐF for 10-12 minutes.

Frequently Asked Questions

Can I use ground chicken instead of whole chicken breasts? Yes. Mix ground chicken with the seasonings + 1 beaten egg + ยผ cup of the panko (as a binder), shape into patties about ยฝ inch thick, then bread with the remaining flour-egg-panko process and air fry as directed. Cooking time stays roughly the same.

Can I prep and freeze these ahead? Yes. Bread the chicken, place breaded patties on a baking sheet lined with parchment, and freeze until solid. Transfer to a freezer-safe bag and freeze up to 3 months. Cook from frozen in the air fryer at 400ยฐF for 18-22 minutes, flipping halfway.

Ingredients

Instructions

  • Put the flour, egg and bread crumbs into 3 separate bowls. Add all the seasonings to the panko bread crumbs.
  • Press each chicken breast into the flour, then the egg, then into the panko crumbs.
  • Place chicken patties in the basket of your air fryer in a single layer, making sure they are not touching. You may have to make these in 2 batches depending on the size of your air fryer.
  • Set the temperature to 400ยฐF and cook the chicken burgers for 9 minutes, then flipping them over and cooking for another 7-8 minutes or until they are fully cooked and reach an internal temperature of 165 degrees F (you can use a meat thermometer to test this).
  • Toast the hamburger buns in the air fryer for 1-2 minutes if you desire, or until they are golden brown.
  • Assemble the chicken burgers by placing a patty on each bun and adding your favorite toppings.

Notes

Can use gluten free all purpose flour, regular white flour, or almond flour.
Can use gluten free breadcrumbs as well.
