Granola is a delicious and healthy snack that can be enjoyed anytime of the day. It’s great for breakfast with some yogurt or milk, or as an afternoon snack with a cup of coffee to keep you going until dinner. 

And if you love healthy oatmeal cookies, then you’re in for a treat with this gluten-free chocolate chip cookie granola recipe. I am quite the granola snob, and this stuff is incredible.

You know how some days you wish it was socially acceptable to eat cookies for breakfast? Well now it is, in a plain granola form.

Picture chewy cookie and crunchy granola chocolate chunks combined into one recipe. This is honestly the best granola recipe I’ve made in awhile, and ten times better than anything you’d find at the grocery store.

If you love cookie recipes or cookie dough then there is no chance you won’t love this. The gooey chocolate combined with the golden brown clusters of granola is a match made in heaven.

This granola is extremely customizable! Just use whatever nuts and seeds you have on hand and make it your own. You could also use raisins in place of chocolate chips for an oatmeal raisin cookie granola.

Other optional add-ins that I would highly recommend are cacao nibs, chia seeds, collagen powder, or Maca powder. The possibilities are endless! I will occasionally make this recipe with coconut shreds as well, for more of an oatmeal coconut chocolate chip granola!

INGREDIENTS YOU WILL NEED FOR THE CHOCOLATE CHIP OATMEAL COOKIE GRANOLA

You will need the following ingredients listed below to make the oat granola (the exact measurements and full recipe are in the printable recipe card at the bottom of this post): 

  • Gluten-free oats – old-fashioned oats, quick oats, or quaker oats work the best. Stay away from steel-cut oats.
  • Almonds – or nuts of choice such as cashews, walnuts, pecans, etc. 
  • Flax seeds 
  • Cinnamon 
  • Nutmeg 
  • Sea salt 
  • Salted butter – can use ghee or coconut oil as a replacement.
  • Honey – can use maple syrup or liquid sweetener of choice. 
  • Vanilla extract
  • Dark chocolate chips – can substitute for milk chocolate, semi-sweet chocolate chips, peanut butter chips, or any chocolate of your choice.
  • Optional – brown sugar, sunflower seeds, etc.

DIRECTIONS ON HOW TO MAKE

  1. Preheat oven to 300 degrees F. Line a baking sheet with parchment paper and set aside.  
  2. In a large bowl, mix together oats, nuts, flaxseed, cinnamon, nutmeg, and salt. 
  3. Add the melted butter, honey and vanilla to same bowl and combine well.  
  4. Spread out the wet mixture on the prepared baking sheet and bake for 45-50 minutes, mixing once or twice.  
  5. Let cool for one hour. This is a very important step, as this is when the granola will get it’s crunchy texture.  
  6. Add the dark chocolate chips and ENJOY!

DELICIOUS WAYS TO ENJOY THE FIRST BATCH

  1. Yogurt Parfait: Layer yogurt, fresh fruit, and granola in a cup or bowl for a delicious and nutritious breakfast or snack.

  2. Smoothie Bowl: Blend frozen fruit, milk or yogurt, and a scoop of granola in a blender to create a smoothie bowl. Top with additional granola and fresh fruit.

  3. Trail Mix: Combine granola with nuts, dried fruit, and chocolate chips for a tasty and portable snack.

HOW TO STORE

  1. Let the granola cool completely before storing it. This will prevent condensation from forming inside the container and making the granola soggy.

  2. Store the granola in an airtight container. A mason jar, plastic container with a tight-fitting lid or a resealable bag are all good options.

  3. Keep the granola in a cool, dry place, away from direct sunlight. Exposure to heat and light can cause the granola to spoil more quickly.

  4. If you want to extend the shelf life of your granola, you can also store it in the refrigerator or freezer. Just be sure to use an airtight container to prevent moisture from getting in.

  5. Label the container with the date you made the granola, so you can keep track of how long it has been stored.

  6. When you’re ready to eat the granola, give it a quick stir to redistribute any chocolate chips that may have settled to the bottom. Enjoy!

HELPFUL TIPS

  1. Store your granola in the fridge! I always keep mine in a mason jar or in a glass container to keep it fresh and crunchy!
  2. Really press down on your granola before putting it into the oven. This helps the granola stick all together so you get big chunks (and who doesn’t love big chunks of granola???)
  3. Once you take your granola out of the oven, let it sit for about an hour on the cookie sheet. This really lets it dry out and again, gives it that CRISP! Once it’s fully cooled and has crisped up you can put it in the fridge!

DO I HAVE TO USE GLUTEN-FREE OATS?

No you don’t! If you are not gluten intolerant or celiac, you can use regular oats instead.

DO I HAVE TO USE GHEE IN THIS RECIPE?

No, you can use butter or coconut oil instead. Butter gives it a very rich taste, which mimics a cookie taste perfectly!

CAN I USE MAPLE SYRUP INSTEAD OF HONEY?

Yes, absolutely! I loved using honey in this recipe but if you are vegan you can definitely use maple syrup instead!
