This biscoff cookie butter latte is espresso and frothy milk blended with Lotus Biscoff cookie butter, so it tastes like a spiced shortbread cookie in a cup. It’s a 5-minute copycat you can make hot or iced.

This is what I make when I want Starbucks money to stay in my pocket and a cookie in my coffee. A biscoff cookie butter latte is espresso and frothy milk blended with Lotus Biscoff cookie butter, so it tastes like a spiced shortbread cookie melted into a latte.

It started as a Starbucks secret menu order that blew up on TikTok, and the homemade version takes five minutes and one jar of cookie butter.

The cookie butter melts into the hot espresso and goes all caramelly and spiced, the milk makes it creamy, and a sprinkle of crushed Biscoff cookies on top seals the deal. I make it hot when it’s cold out and iced the rest of the year.

What Is a Cookie Butter Latte?

A cookie butter latte is a latte sweetened and flavored with cookie butter instead of a regular syrup.

Cookie butter, also called Biscoff spread or speculoos, is a smooth spread made from crushed spiced shortbread cookies, with notes of cinnamon, caramel, and a little nutmeg. Lotus Biscoff and Trader Joe’s both make popular versions.

The drink took off as a Starbucks secret menu order on TikTok, and it’s a lot cheaper to make at home with a jar of cookie butter you can use for weeks.

Ingredients You’ll Need

  • Cookie butter โ€” the whole point. Lotus Biscoff spread or Trader Joe’s cookie butter both work. Melt it slightly so it blends in smooth.
  • Espresso โ€” one or two shots. No machine? Strong brewed coffee, cold brew, or instant espresso all work.
  • Milk โ€” any milk you like. Oat milk froths beautifully and pairs with the spice, whole milk is the creamiest.
  • Brown sugar and vanilla โ€” a little extra sweetness and warmth. You can swap both for a tablespoon of vanilla syrup.
  • Toppings (optional) โ€” whipped cream, a drizzle of melted cookie butter, crushed Biscoff cookies, or a dash of cinnamon.

How to Make a Biscoff Cookie Butter Latte

  1. Brew the espresso. Pull one or two shots of espresso, or brew a half cup of strong coffee.
  2. Melt the cookie butter in. Add the cookie butter to the hot espresso and stir until it fully dissolves. Doing this while the coffee is hot keeps it from clumping.
  3. Add the sweetener. Stir in the brown sugar and vanilla until smooth.
  4. Froth the milk. Heat the milk and froth it with a handheld frother, blender, or steam wand until foamy.
  5. Combine and top. Pour the frothed milk over the espresso mixture, then finish with whipped cream, a drizzle of cookie butter, and crushed Biscoff cookies.

How to Make an Iced Biscoff Latte

For an iced version, melt the cookie butter into the hot espresso the same way, then let it cool for a minute so it doesn’t melt your ice. Fill a tall glass with ice, pour in the cookie butter espresso, and top with cold milk. Stir, add your toppings, and you’ve got an iced biscoff latte. Cold brew works great here in place of espresso.

Tips for the Best Cookie Butter Latte

  • Melt the cookie butter first. Stir it into the hot espresso before adding milk so it dissolves smooth instead of leaving clumps at the bottom of the cup.
  • Froth the milk. Even a cheap handheld frother gives you that creamy, cafรฉ-style foam.
  • Drink it fresh. Lattes lose their foam fast, so make it right before you want to drink it.

  • Drizzle caramel or white chocolate sauce into the cup for extra sweetness.
  • Make a cookie butter cold foam by frothing cold milk or cream with a spoonful of cookie butter and floating it on top.
  • Add a pinch of pumpkin spice or extra cinnamon in the fall.

Cookie Butter Latte FAQs

Can I make a cookie butter latte without an espresso machine? Yes. Strong brewed coffee, cold brew concentrate, or instant espresso all work. You want a bold coffee base so the flavor comes through the cookie butter and milk, so brew it stronger than you would for a regular cup.

What milk is best for a biscoff latte? Whatever you like. Whole milk gives you the creamiest, most cafรฉ-style result. Oat milk is the best dairy-free pick here, since it froths well and its natural sweetness pairs with the spiced cookie flavor.

Is Biscoff cookie butter gluten-free? No. Lotus Biscoff spread is vegan, but it’s made with wheat flour, so it contains gluten. If you need this gluten-free, look for a certified gluten-free speculoos or cookie butter spread and use gluten-free cookies for the topping.
