SIMPLE INGREDIENTS FOR THE COTTAGE CHEESE ICE CREAM RECIPE

You will need the following ingredients listed below to make this strawberry cheesecake ice cream (the exact measurements are in the printable recipe card below):

  • Cottage cheese – whole milk cottage cheese works a lot better than low fat cottage cheese for this recipe. The full-fat cottage cheese creates a more creamy consistency vs icier consistency.
  • Frozen strawberries – can also use fresh strawberries or fresh fruit of choice.
  • Pure maple syrup – or your choice of sweetener.
  • Strawberry cheesecake protein powder from PEScience – can use vanilla protein powder instead if desired.
  • Graham crackers – can use gluten free if desired.
  • Optional – almond butter, caramel sauce to make caramel swirls, natural sweetener, ferrero rocher or chocolate of choice, etc.

HOW TO MAKE THE HIGH PROTEIN ICE CREAM

In a high-powered blender or food processor, or using an immersion blender, blend up the cottage cheese. Then add all remaining ingredients except for the graham crackers.

Add to Tupperware or bread loaf pan. Add additional strawberries and crushed graham crackers and freeze for 2-3 hours.

Let thaw at room temperature for 3-5 minutes before enjoying your high protein ice cream!

  • You could even layer it up parfait-style with fruit, yogurt, or whipped cream—boujee and delish.
  • Or slap a scoop between two cookies or waffles for a next-level ice cream sandwich moment.

FLAVOR VARIATIONS FOR THE COTTAGE CHEESE ICE CREAM

  • Peanut Butter & Jelly – Swap the fruit for a big spoon of peanut butter and your fave jam. Tastes like childhood, but protein-packed.

  • Lemon Blueberry – Add lemon juice and fresh or frozen blueberries for a refreshing, summery twist.

  • Chocolate Fudge Brownie – Mix in cocoa powder and chopped up brownie bits for a rich, fudgy dessert vibe.

  • Cinnamon Roll – Stir in cinnamon and a splash of vanilla extract. Warm, cozy, and perfect for fall cravings.

  • Matcha Green Tea – Add matcha powder for that earthy, trendy flavor with a creamy base.

  • Banana Chocolate Chip – Throw in frozen bananas and chocolate chips for those chunky monkey feels. It’s a vibe.

STORING THE HIGH PROTEIN ICE CREAM

In the freezer: Transfer the cottage cheese ice cream to an airtight container and store it in the freezer for up to 2 weeks. Be sure to cover the surface with a piece of plastic wrap before sealing the container to prevent ice crystals from forming.

Thawing: Allow the ice cream to sit at room temperature for about 5-10 minutes before scooping and serving. This will make it easier to scoop and provide a creamier texture.

TOP TIPS FOR BEST RESULTS

Use full-fat cottage cheese: Using fat-free cottage cheese will give your ice cream an icy texture. It makes a huge difference using full fat to give it a creamier texture.

Don’t freeze longer than 3 hours: The ideal freeze time is 2-3 hours but anything more than that it will become too solid.

FAQS

I DON’T LIKE COTTAGE CHEESE, WILL I STILL LIKE THIS RECIPE?

Most people are turned off by the texture of cottage cheese—and honestly, fair. But when you blend it up until smooth, that weird texture disappears and it takes on the flavor of whatever fruit you mix in. If you’ve been on the fence about cottage cheese, this recipe is the perfect place to start!

WHAT TYPE OF COTTAGE CHEESE IS BEST TO USE?

For the creamiest texture and best flavor, use full-fat cottage cheese. It blends up smoother and gives your ice cream a rich, dreamy consistency. Low-fat or fat-free versions can work too, but they tend to be more watery and less creamy.

IS THIS COTTAGE CHEESE ICE CREAM ACTUALLY HEALTHY?

Yes! Cottage cheese ice cream is a healthier dessert option—especially compared to traditional ice cream. It’s high in protein, lower in sugar (depending on your mix-ins), and made with simple, whole ingredients. Plus, no weird additives or preservatives. Just creamy, feel-good vibes.
