INGREDIENTS YOU NEED FOR THE GLUTEN FREE APPLE CRUMB CAKE

You will need the following ingredients listed below to make this apple cinnamon coffee cake (the exact measurements, nutrition information and full recipe are in the printable recipe card below):

  • Almond flour – I like using Bob’s Red Mill best.
  • Gluten free oat flour – can blend up quick oats in food processor or high speed blender
  • Ground cinnamon
  • Baking soda
  • Extra virgin olive oil
  • Pure maple syrup
  • Unsweetened apple sauce
  • Large eggs
  • Fresh apples – can use any type of apples you like such as granny smith apples, red delicious, granny smith, etc.
  • Salt
  • Golden Lakanto sweetener – can also use brown sugar, white sugar or coconut sugar.
  • Grass fed melted butter
  • Powdered Lakanto sweetener – regular icing sugar
  • Soy milk – any dairy-free milk will work such as unsweetened almond milk, oat milk, or cashew milk.
  • Vanilla extract

HOW TO MAKE

  1. Start by making the streusel by combining the almond flour, sweetener, and cinnamon in a small bowl. Add the butter and use a potato masher to mix and create a crumb like texture. Put in refrigerator. 
  2. Preheat oven to 350 degrees F. 
  3. Spray a bread loaf pan with non stick spray and line with parchment paper.  
  4. Start the cake by combining the flour mixture, cinnamon, baking soda, and salt in a large bowl.  
  5. In a separate bowl, combine the olive oil, maple syrup, apple sauce, and eggs.  
  6. Combine the dry ingredients with the wet ingredients. Do not overmix.  
  7. Peel and slice apples VERY thin. If you do not get the apples thin enough they will have a hard time cooking under the streusel topping.  
  8. In the bread loaf pan start by adding the cake batter mixture, then add the chopped apples and press down slightly. Add the crumble topping to the top of the cake and bake for 30-40 minutes. 
  9. While the cake is baking, start the icing. Mix together all ingredients with a hand mixer and set aside till cake is done and cooled. Drizzle with icing when ready to serve! 

SUBSTITUTIONS FOR PALEO APPLE COFFEE CAKE

I personally haven’t tried these substitutions. These are just my best-educated guesses.

Dairy Free: In place of grass-fed butter in the streusel, use vegan butter or coconut oil. I love Earth Balance or Melt!

Sugar Free: In this recipe I am using monk fruit sweetener to keep it lower in sugar content! You can absolutely still use brown sugar as I realize monk fruit isn’t a very common ingredient!

Gluten Free: I love using almond flour and gluten free oat flour in many of my baking recipes. I have not tested this with other flours but I can assume all-purpose flour or gluten-free flour would work okay in place of the almond flour!

HOW TO STORE

  4. Individual Slices: If you’ve already sliced the cake, it’s a good idea to wrap each individual slice in plastic wrap before storing them in an airtight container. This prevents slices from drying out and helps maintain their moisture.

  5. Freezing: For longer-term storage, consider freezing the cake. Wrap the cake tightly in plastic wrap, followed by a layer of aluminum foil, or place it in a freezer-safe airtight container. Label the container with the date. Frozen cake can be stored for up to 2-3 months.

CAN I ADD REGULAR GRANULATED SUGAR INSTEAD OF BROWN SUGAR TO CRUMB TOPPING?

Brown sugar adds a deeper flavor and moisture to the crumb topping. However, you can use regular granulated sugar in a pinch, but the texture and flavor may vary slightly.

CAN I FREEZE THIS EASY RECIPE WITH THE CRUMB TOPPING?

Yes, you can freeze the cake with the crumb topping. Just ensure it’s wrapped tightly in plastic wrap and aluminum foil or stored in an airtight container to prevent freezer burn.
