Starbucks Egg White Bites Recipe

STARBUCKS EGG WHITE BITES RECIPE

If you’re anything like me, you’ve probably paid way too much for egg white bites at Starbucks and immediately thought, “Okay wait… I could totally make these at home.” And guess what? You can — and they might be even better.

Plus, way more budget-friendly and packed with protein.

These homemade egg white bites are fluffy, flavourful, and perfect for meal prep. They’re made with simple ingredients, and thanks to the cottage cheese, they stay super soft and creamy (no dry, sad eggs here). Let’s do it.

SIMPLE INGREDIENTS YOU NEED FOR THE STARBUCKS EGG WHITE BITES RECIPE

You will need the following ingredients listed below to make this healthy egg bites recipe (the exact measurements, nutrition information and full recipe are in the printable recipe card below):

  • Egg Whites – I recommend using pasture raised eggs but any type of eggs will work. Pro tip – buy liquid egg whites at the store, you will need 3 tablespoons in place of 1 egg white.
  • Cottage cheese – this ingredient is protein packed, giving this copycat recipe an incredible flavour, texture, and nutritional value.
  • Salt – just a bit to really enhance and bring all the flavours together.
  • Monterey Jack Cheese – this is what the Starbucks version uses, however you could also use mozzarella cheese or another hard cheese. I have also tested this recipe with gruyere cheese and cheddar cheese – they both work but don’t taste as similar as the real thing.
  • Red Bell Pepper – fresh peppers are best. You could also use roasted red pepper but I find they give off too much moisture in the recipe.
  • Spinach – fresh spinach and you don’t need much of it. You could also add green onion to this recipe for extra flavor, however it’s not needed.

HOW TO MAKE COPYCAT STARBUCKS EGG BITES RECIPE

Preheat oven to 325F. Spray a silicone muffin tin with non stick cooking spray. Place a baking sheet (approx 16×12″ and something with high enough edges) under the silicone muffin tray and set aside.

In a high power blender, add the eggs, cottage cheese, salt and monterey jack cheese. Blend on high for 30-40 seconds.

Chop up the red bell pepper and spinach till very fine. Then add to the bottom of the silicone molds (makes 9-10 egg bites).

Pour the egg mixture into the silicone molds, approximately 1/2 to 3/4 of the way full. Mix the red pepper and spinach around so it’s not all floating to the top.

Place the baking sheet & silicone tray in the oven and add boiling water to baking sheet till it’s about halfway full.

Bake the eggs on the baking sheet filled with water for 25-30 minutes. CAREFULLY remove from oven (I grabbed the silicone tray with oven mitts and left the baking sheet to cool) and use a knife to cut around the outsides of the egg bites to loosen them from the tray.

Close your eyes, pretend you’re at Starbucks, and enjoy them while they’re warm for a fraction of the price!

If you want to take this one extra step, toss them in the air fryer for a few minutes to crisp them up! This will keep the fluffy texture while giving them the crisp exterior.

TIPS AND TRICKS FOR BEST RESULTS

  • Make sure you grease those muffin cups really well. Whether you’re using a silicone mold or muffin pan, coat them generously with non-stick spray so your egg bites pop out clean (no sticking drama here).

  • Don’t overfill the cups — go about ¾ full. The egg mixture will puff up while it bakes, and giving it a little room at the top keeps things from overflowing into a messy egg explosion.

  • Bake them in a water bath if you want that ultra soft, Starbucks-style texture. You can skip it, but the steam really helps keep everything nice and fluffy, not dry.

  • Let them cool for a few before removing. Just a few minutes in the tray helps them set up so they don’t fall apart when you take them out.

STORING LEFTOVER COPYCAT STARBUCKS EGG WHITE BITES 

Storing in the refrigerator: Add the copycat sous vide egg bites to an airtight container and refrigerate up to 5 days. You can microwave for 30-60 seconds in the microwave or toss them in the air fryer for a quick heat + crispy edge combo.

Storing in the freezer: Add the bites to an airtight container or freezer bag and freeze up to 2 months. Once the bites are thawed, reheat in the microwave for 60-90 seconds on high or until heated through.

Ingredients

  • 1 cup egg whites
  • 2/3 cup cottage cheese
  • 3/4 cup monterey jack cheese, or mozzarella
  • pinch of salt
  • 1/2 small red pepper, finely chopped
  • 1/4 cup packed spinach, finely chopped

Instructions

  6. I really liked this! I omitted the spinach (store was out) and mine came out a little bland. Next time I’ll add more spices and maybe a few different veggies. Overall, a wonderful base and technique that is really similar to the starbucks egg white bites. I’ve tried making a whole egg bite but find them to be exceedingly rich- this egg white version is the way to go.

    In the past I’ve reheated on the stove in a pan to get that starbucks crisp texture but will try the suggestion for an air fryer.
