SIMPLE INGREDIENTS YOU NEED FOR THE FROZEN PROTEIN S’MORES
You will need the following ingredients listed below to make this easy dessert recipe (the exact measurements, nutritional value and full recipe are in the printable recipe card below):
-
Graham crackers – The classic s’mores base with a satisfying crunch.
-
White chocolate chips + coconut oil – For that sweet base layer of melty goodness.
-
Light Cool Whip – Keeps it fluffy and freezer-friendly.
-
Birthday cake protein powder – Adds flavor and a protein boost (I used 45g or about 1 ½ scoops). I love the 1UP Nutrition brand – use code BAILS at checkout to save 20% on everything.
-
Sprinkles – The more the better. Adds crunch, color, and total birthday energy.
HOW TO MAKE THE FROZEN PROTEIN S’MORES BARS
-
Melt the chocolate: In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
-
Layer the grahams: Place half the graham crackers on a parchment-lined baking sheet. Spread a layer of melted chocolate on top of each cracker.
-
Freeze the base: Pop the tray in the freezer for 10–15 minutes until the chocolate is set.
-
Mix the filling: In a separate bowl, combine the Cool Whip and birthday cake protein powder. Mix until completely smooth and fluffy.
-
Assemble the sandwiches: Remove the chocolate grahams from the freezer. Spoon the protein filling onto each one, then gently press a plain graham cracker on top to create a sandwich.
-
Decorate: Dip one corner or edge of each sandwich in more melted chocolate if desired, then dip into sprinkles for that birthday cake look. Alternatively can simply dunk the sides of the sandwich into more sprinkles.
-
Freeze again: Return the s’mores to the baking sheet and freeze for at least 1 hour or until fully firm.
-
Serve & store: Enjoy straight from the freezer! Store extras in an airtight container in the freezer for up to one week.
TIPS AND TRICKS FOR BEST RESULTS
-
Freeze in stages: Freezing the chocolate-coated graham crackers first keeps the filling from squishing out when you assemble.
-
Mix the filling well: Make sure the protein powder is fully incorporated into the Cool Whip for a smooth, fluffy texture.
-
Work quickly: The Cool Whip mixture softens fast, so assemble the sandwiches as soon as the crackers come out of the freezer.
-
Don’t overfill: A little filling goes a long way. Overstuffing makes the sandwiches messy and harder to dip in sprinkles.
-
Press gently: When topping with the second graham cracker, press lightly so you don’t crack the base.
-
Get creative with sprinkles: Use colorful sprinkles, jimmies, or even crushed freeze-dried fruit for a fun twist.
-
Store airtight: Keep the finished s’mores in an airtight container in the freezer so they stay crisp and fresh for up to a week.
FAQS
DOES THIS PERFECT TREAT TASTE LIKE REAL S’MORES?
Not exactly — there’s no marshmallow or campfire involved, but the graham cracker + chocolate combo totally gives dessert sandwich vibes.
WILL THESE SATISFY A SWEET TOOTH?
Absolutely. Between the creamy filling, crispy graham crackers, and sprinkle-covered edges, they’re the perfect refreshing frozen treat for warm days when your sweet tooth won’t quit.
WHAT KIND OF CHOCOLATE IS BEST FOR THESE FROZEN S’MORES?
Milk chocolate, dark chocolate, or semi-sweet chocolate chips will all melt beautifully as well. Use the double-boiler method or microwave in a small bowl with a splash of coconut oil for smooth, rich chocolate.
CAN I MAKE THESE DAIRY-FREE?
Yes! Simply swap the Cool Whip for a dairy-free alternative like Coco Whip or SoDelicious coconut whipped topping, and use a plant-based protein powder. For the chocolate, opt for dairy-free semi-sweet or dark chocolate chips. The result is just as creamy, sweet, and perfect for any dietary needs.
