INGREDIENTS LIST YOU NEED FOR THE DARK CHOCOLATE BROWNIE BRITTLE

  • Full-fat cottage cheese – if you live in the States and have access to Good Culture cottage cheese I recommend using that brand.
  • Pure maple syrup – or liquid sweetener of choice.
  • Vanilla extract
  • Unsweetened cocoa powder
  • Almond flour
  • Chocolate protein powder
  • Mini chocolate chips – can use white chocolate chips, peanut butter chips, etc.
  • Coarse sea salt
  • Coconut oil

HOW TO MAKE

  1. In a high-speed blender or food processor add the cottage cheese, maple syrup and vanilla extract. Blend until smooth.
  2. Add the cottage cheese mixture to a large bowl. Then add the cocoa powder, almond flour, and protein powder. Mix until combined, then fold in chocolate chips.
  3. Line a large baking sheet with parchment paper and spread the chocolate mixture evenly onto the sheet, pressing it down to form a thin layer.
  4. Place the baking sheet in the freezer for about 30 minutes, or until the bark is firm and set.
  5. While setting, melted chocolate chips and coconut oil in a small microwave-safe bowl.
  6. Once set, remove the bark from the freezer and pour the chocolate overtop evenly. Top with flakey sea salt and add back to freezer for 5 minutes or until set. 
  7. Remove from freezer and cut into pieces of your desired size using a sharp knife or your hands.

FOR THE BROWNIE BATTER LAYER

  • 1 cup cottage cheese, blended
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder
  • 1/3 cup almond flour
  • 1 1/2 scoops chocolate protein powder
  • 2 tbsp mini chocolate chips
