SIMPLE INGREDIENTS YOU NEED FOR THE GLUTEN-FREE MONSTER COOKIES

You will need the following ingredients listed below to make the cookie dough balls (the exact measurements, nutrition information and full recipe are in the printable recipe card at the bottom of the post):

  • Gluten free all-purpose flour – must contain xanthan gum. I love using Bob’s Red Mill.
  • Baking soda
  • Baking powder
  • Salt – less than a teaspoon salt.
  • Unsalted butter – can use regular salted butter but just omit the salt.
  • Granulated white sugar
  • Light brown sugar
  • Large eggs
  • Pure vanilla extract
  • Milk chocolate M&M’s candies – can use regular size m & m’s or a bag of m&m mini. As long as it’s chocolate candies it really doesn’t matter. The red and gren holiday packs are ideal for this recipe.
  • Optional – top with kosher salt.

HOW TO MAKE THE CHRISTMAS M&M COOKIES RECIPE

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder and salt. Set aside.
  3. In a large bowl or stand mixer, cream butter, granulated sugar, and brown sugar together until creamy. You can use an electric mixer on medium-high speed or mix by hand with a wooden spoon.
  4. Add the large egg one by one and the vanilla extract to the mixing bowl and continue to mix until fully combined.
  5. Gradually add in the dry ingredients from step 2 to the wet ingredients, mixing until just combined.
  6. Fold in the M&M’s candies, making sure they are evenly distributed throughout the dough.
  7. Using a tablespoon or cookie scoop, drop the cookie dough by rounded spoonfuls onto the prepared baking sheet lined with parchment paper, leaving about 2 inches of space between each cookie. Add extra M&M’s to the top of the cookie.
  8. Freeze the cookies for 20 minutes. This will help them from spreading.
  9. Bake the cookies for 8-11 minutes or until they have lightly golden brown crisp edges. Baking time will vary depending on if you made smaller cookies or giant cookies.
  10. Remove the cookies from the oven and allow them to cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
