How to make fluffy whipped coffee (dalgona coffee)
Whipped coffee, also known as Dalgona coffee or Fluffy Coffee, is a delicious twist on your morning caffeine addiction. It’s SO easy to make, only uses 3 ingredients and it’s SO yummy! It’s like a fancy coffee shop coffee without the expense or trip out of the house.
FOR OFF AS A DISCLAIMER – if you are sensitive to caffeine I would HIGHLY recommend using decaf instant coffee in this recipe, or cutting the recipe in half! The first time I made this I was INLOVE with the flavour and drank it super fast. Next thing I knew I was bouncing off the walls from caffeine overload! I’m not sure how much caffeine is in 2 tbsp of instant coffee, but it’s got to be a lot!
Whipped Coffee has become the official caffeine beverage of choice for many during this quarantine. Dalgona coffee recipes and videos have been popping up all over the internet for the last month, and I now understand why! This stuff is so easy to make, uses so few ingredients and is DELICIOUS!

Ingredients you will need for the whipped coffee
White sugar or Coconut sugar
Almond Milk (or any milk)
How to make the fluffy coffee
You will need 2 tablespoons of instant coffee, sugar or sugar substitute, water and dairy free milk (or regular milk).
Mix the instant coffee and sugar together in a bowl. Add 2 tablespoons of water.
Use a hand mixer to whip the coffee.
And keep whipping…. until it’s doubled in size.
Pour ice, and 16 oz of almond milk (or any milk) into a cup. Top with the whipped coffee, you may not need the entire batch. Use a straw or spoon to stir the foam into the milk. Drink through a straw. This will not taste good if you do not mix everything together, it will be bitter and strong! Use immediately, coffee will flatten after a few hours and does not store well in the refrigerator. Serve and enjoy!

How to drink the dalgona coffee
When I first made this on my Instagram stories, I had a few people message me saying it was too strong or bitter. The trick to drinking this coffee is mixing the fluff in with all the milk before drinking! I mix it all in with a straw or spoon, then drink it through a straw and it’s AMAZING! If you try and drink the fluff straight from a mug it will taste bitter and strong, and I can pretty much guarantee you won’t enjoy it.
Can I substitute other types of sugar for granulated white sugar?
Yes! I personally have not tested any other types of sugar because I don’t have any on hand. But I have seen others make it with brown sugar, coconut sugar, cane sugar, and monk fruit sweetener!
Do I HAVE to add sugar to the whip?
No, not necessarily! I have tested this recipe without sugar and it works, but does not stay as fluffy. It begins to dissolve after 2-3 minutes and will turn back into a liquid. I also tested this recipe using collagen instead of sugar. I tested using 1/2 tbsp of collagen with the instant coffee and water and again it wasn’t AS fluffy, but it did the trick. Without the sugar it will yield a VERY strong bitter taste. If you want a fluffy whip like the photos, I would recommend using the sugar!
Do you need a hand mixer to make this?
No, you can simply use a whisk, a hand frother or a stand mixer if you have one! Using a hand mixer it takes approximately 5-6 minutes to get this fluffy. If you are using a hand frother or a whisk it will take a bit longer and your arm may get tired!
Can I use brewed/drip coffee instead of instant coffee?
No, this will not work with brewed coffee! I use the Tim Hortons instant coffee, but I’ve seen many people using the Nescafe Classic. If you are sensitive to caffeine I would HIGHLY suggest getting decaf, and this will definitely give you a good BUZZ!

Fluffy Dalgona Coffee Recipe
- 2 tbsp instant coffee
- 2 tbsp granulated white sugar
- 2 tbsp water
- 12-16 ounces almond milk, or any other non dairy, or regular milk
- In a medium size bowl, combine the instant coffee and sugar.
- Add the water and stir the ingredients together.
- Use a hand mixer to whip the coffee for approximately 5 minutes, until it’s doubled in size (see photos above for reference).
- Fill a 16 ounce cup with ice and milk alternative. I also added a splash of Vanilla almond milk creamer to mine. Top it with the whipped coffee. I don't always use all the coffee, this can make 1-2 portions depending on how strong you like your coffee!
- Use up the whipped coffee within an hour or two as it will slowly turn back into liquid form overtime!
