Onion Boil Recipe (Buttery, Cajun-Spiced, Ready in 1 Hour)

An onion boil is a whole sweet onion hollowed out, filled with butter, Cajun seasoning, Old Bay, and garlic powder, wrapped tightly in foil, and roasted until it melts into tender, buttery, pull-apart layers โ€” despite the name, nothing is actually boiled.

TikTok named this one incorrectly and nobody corrected them because the result is too good to argue with.

An onion boil is actually roasted in the oven. The name comes from the Cajun seafood boil-style seasoning โ€” butter, Old Bay, Cajun spice โ€” not the cooking method.

The onion steams inside a sealed foil packet, soaking up all that butter and spice as it roasts for an hour, until every single layer is soft, sweet, and dripping with flavour. Then you broil it for a few minutes at the end because you deserve a caramelised, golden top.

It sounds too simple to be this good. It is not too simple to be this good.

Ingredients You’ll Need

  • Sweet onion โ€” Vidalia is the gold standard. Sweet onions roast into something almost caramel-like โ€” mellow, slightly sweet, deeply savoury. Yellow onions work too but stay a little more pungent. Red onions are pretty but firmer and sharper. Stick with sweet for the best melt-in-your-mouth result.
  • Butter โ€” this is not optional. Butter melts down into the core of the onion as it roasts, coating every layer and creating that glossy, rich finish you see in every viral video. Use real butter.
  • Olive oil โ€” works with the butter to carry the seasoning into every layer and prevents the butter from burning.
  • Cajun seasoning โ€” the backbone of the flavour. Brings heat, smokiness, garlic, and depth all at once. Adjust the amount based on how spicy you like things.
  • Old Bay seasoning โ€” the seafood boil connection. Adds a slightly herby, celery-salt warmth that makes this taste like something more complex than it actually is.
  • Garlic powder โ€” amplifies the savoury base. Don’t substitute with fresh garlic for this recipe โ€” it can burn inside the foil packet.

How to Make an Onion Boil

  1. Preheat oven to 375ยฐF.
  2. Prep the onion. Peel the outer skin. Trim just enough off the root end so it sits flat โ€” keep the base intact so the onion holds together during roasting. Using a melon baller or small spoon, scoop out the top center of the onion about a third of the way down to create a well.
  3. Make the seasoning mixture. In a small bowl, mix together the olive oil, Cajun seasoning, Old Bay, and garlic powder until combined.
  4. Fill and season. Place the onion in the center of a large sheet of aluminum foil. Drop the butter into the well. Pour the seasoning mixture into the well and let it run down the sides of the onion. Rub any remaining seasoning over the outside.
  5. Wrap tightly. Bring the sides of the foil up and seal tightly into a packet. This is the most important step โ€” a tight seal traps the steam inside which is what makes the onion tender and juicy. A loose seal means dry onion. Seal it like you mean it.
  6. Roast for 45โ€“60 minutes. Place the foil packet on a baking sheet and roast until the onion is completely fork-tender. Check at 45 minutes โ€” a knife should slide through with zero resistance. If there’s any firmness, seal it back up and give it 10 more minutes.
  7. Broil for the finish. Open the foil carefully โ€” steam will escape. Drizzle any extra butter or olive oil over the top. Switch the oven to broil and broil for 5โ€“8 minutes until the top is golden and lightly caramelised. Watch it closely โ€” it goes from golden to burnt fast.
  8. Serve immediately. Spoon every drop of the buttery seasoned juices from the foil back over the onion before serving. That liquid is the best part.

Seal the foil completely. This is non-negotiable. The steam trapped inside the packet is what cooks the onion through. Any gaps and the butter drips out and the onion dries out. Double-wrap if needed.

Don’t rush the roasting time. 45 minutes is the minimum. Some onions need the full hour. The knife test is your best friend โ€” if there’s any resistance, keep going. Undercooked onion boil is the only bad onion boil.

The broil step is worth the extra 8 minutes. It caramelises the edges, adds a slight char to the top layers, and deepens the sweetness significantly. The difference between broiled and not-broiled is not subtle.

What to Serve With It

  • Rice โ€” spoon the buttery juices from the foil directly over the rice. Genuinely excellent.
  • Crusty bread โ€” for soaking up the Cajun butter pooled at the bottom of the foil.
  • Grilled chicken or steak โ€” the onion boil as a side dish earns compliments disproportionate to the effort involved.
  • Pasta โ€” chop the leftover roasted onion and stir it into pasta with a splash of pasta water. One of the better fridge-cleanout moves.
  • As a topping โ€” pulled apart over burgers, tacos, or grain bowls.

Variations

  1. Yellow onion โ€” works well, slightly more savoury and less sweet than Vidalia. Increase the roasting time by 5โ€“10 minutes since yellow onions are often larger.
  2. Extra spicy โ€” double the Cajun seasoning and add a pinch of cayenne to the seasoning mix.
  3. Milder version โ€” reduce the Cajun seasoning by half and add a teaspoon of Italian seasoning instead. Still delicious, less heat.
  4. Grill method โ€” prepare exactly the same way but cook in foil packets over indirect heat at 375ยฐF on a covered grill for 45โ€“60 minutes. Perfect for summer BBQ season.
  5. Make it a meal โ€” add sliced andouille sausage or raw shrimp to the foil packet in the last 20 minutes of cooking. The juices become a full seafood boil situation.

Store leftover onion boil in an airtight container in the fridge for up to 4 days โ€” save the buttery juices too, they’re incredible stirred into rice or pasta. To reheat: wrap in foil and warm in a 350ยฐF oven for 15โ€“20 minutes. Microwave works in a pinch but the onion loses its texture slightly.

Ingredients 

  • 2 large sweet onions
  • ยผ cup butter divided
  • 1 tsp paprika
  • 1 tsp Old Bay seasoning
  • 1 tsp cajun seasoning
  • 1 tsp italian seasoning
  • ยฝ tsp salt
  • ยฝ tsp black pepper
  • 1 tsp crushed garlic
  • 1 tsp chili onion crunch can sub for red chili flakes

Instructions

  • Preheat your oven to 375ยฐF. Take a small melon baller and scoop out the top center of the onions (about 1/2 down) to create a โ€œwellโ€ for the seasonings.
  • Place the onion on a sheet of aluminum foil. Add 1 tbsp butter into the middle of each of the onion wells.
  • In a small bowl, melt the remaining 2 tbsp butter in microwave. Then add the paprika, Old Bay seasoning, cajun, italian seasoning, salt, black pepper, crushed garlic and chili onion crunch. Pour the mixture evenly over the onions so it drips down the sides. Sprinkle with a little extra salt.
  • Wrap the onion tightly in foil and place it in a baking dish or cast iron skillet to catch any drips. Roast for 50-55 minutes on the center rack. Check for tenderness; if needed, bake another 10 minutes until fork-tender.
  • Optional: Turn the oven to broil. Open the foil, drizzle a bit more butter or olive oil, and sprinkle extra salt. Broil for 2-3 minutes, watching closely for a golden brown, caramelized top.
  • Peel away the outer layer and enjoy each soft, flavorful layer with an extra sprinkle of salt. Donโ€™t forget to pour all the delicious juices from the foil over the onion for maximum flavor!
