SIMPLE INGREDIENTS YOU NEED FOR THE FRESH SPRING ROLLS

You will need the following ingredients listed below to make the shrimp spring rolls (the exact measurements, nutrition information and full recipe are in the printable recipe card at the bottom of this post):

  • Rice paper wrappers
  • Raw shrimp
  • Fresh cilantro
  • Red cabbage
  • Bean sprouts
  • Grated carrots
  • Rice noodles
  • Butter lettuce – lettuce leaf of any kind
  • Creamy peanut sauce for dipping – can use store bought or make a homemade version.
  • Optional – fresh herbs of choice such as mint leaves, fresh veggies of choice, bell peppers, hoisin sauce, fish sauce, maple syrup, etc.

HOW TO MAKE

1. Prepare the Ingredients:

  • Cook the shrimp and rice vermicelli noodles according to package instructions. Ensure all vegetables and herbs are washed, sliced, and ready for assembly.

2. Soften the Rice Paper:

  • Fill a shallow dish with warm water. One at a time, dip each sheet of rice paper into the water for about 10-15 seconds until it softens. Place it on a clean, small damp towel.

3. Build the Rolls:

  • On the softened rice paper, arrange the pieces of shrimp at the bottom. Add a small handful of cilantro, followed by red cabbage, bean sprouts, grated carrot, rice vermicelli noodles, and the leaf lettuce.

4. Roll It Up:

  • Gently fold the sides of the rice paper inwards and roll it up tightly from the bottom, sealing the edges. Repeat for each roll.

5. Prepare the Dipping Sauce:

  • In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic powder and water until well combined. Adjust the ingredients to achieve your desired taste.
