Crispy Air Fryer Sesame Chicken Bites (62g Protein)

These crispy air fryer sesame chicken bites have 62g of protein per serving, are gluten-free with a simple swap, and the takeout dupe I make more than any other.

This is the recipe I get the most DMs about every time I post it and I completely understand why. The combination of that crispy coating with the sticky homemade sesame sauce is SO good and the fact that it has 62 grams of protein per serving makes it feel almost too good to be true.

The method that makes the coating actually crispy is the dredge: egg wash first, then flour coating, so the breading adheres properly and doesn’t slide off in the air fryer. The sauce takes about 5 minutes on the stove while the chicken cooks โ€” soy sauce, honey, rice vinegar, sesame oil, fresh garlic, and grated ginger thickened with a cornstarch slurry โ€” and it clings to every piece.

Serve it over jasmine rice and you have a full dinner in 30 minutes that tastes like the sesame chicken from a Chinese restaurant but costs $4 to make.

Use tamari or coconut aminos instead of soy sauce and a 1:1 gluten-free flour blend and this is fully gluten-free without any other changes.

Ingredients

Everything is in the recipe card below โ€” here’s what matters for each piece.

FOR THE CHICKEN:

  • 1ยฝ lbs boneless skinless chicken breasts โ€” cut into roughly 1-inch bite-sized pieces. Try to keep them consistent in size so they cook evenly. Chicken thighs work too and are slightly juicier โ€” add 1โ€“2 minutes to the cook time.
  • 1 cup all-purpose flour โ€” the coating that gives you the crispy exterior. For gluten-free: swap 1:1 with any gluten-free flour blend. The result is just as crispy.
  • Garlic powder, onion powder, salt, black pepper โ€” seasoned flour makes a meaningfully better result than plain flour. Don’t skip the seasoning step.
  • 2 large eggs, beaten โ€” the egg wash is what makes the flour stick to the chicken rather than falling off in the basket. Dip chicken in egg first, then flour โ€” in that order.
  • Cooking spray โ€” spray the basket before the chicken goes in, then a light spray over the top of the coated pieces helps them brown evenly.

FOR THE SESAME SAUCE:

  • ยผ cup low-sodium soy sauce โ€” the savory base. Low-sodium so you control the salt level. For gluten-free: swap for tamari (same flavor) or coconut aminos (slightly sweeter, milder).
  • 2 tbsp honey โ€” the sweetness that makes the sauce sticky and glossy. Maple syrup works as a swap.
  • 1 tbsp rice vinegar โ€” brightens the sauce and cuts through the sweetness. Don’t skip it.
  • 1 tbsp sesame oil โ€” the toasted sesame flavor that makes this taste like proper sesame chicken. Goes in at the end, off the heat, to preserve the flavor.
  • 1 tsp garlic powder โ€” or 2 fresh garlic cloves, minced. Fresh garlic is better if you have it.
  • ยฝ tsp fresh grated ginger โ€” this is the ingredient that makes the sauce taste restaurant-level rather than just homemade. Grate it fresh on a microplane directly into the saucepan.
  • 1 tbsp cornstarch + 2 tbsp water โ€” the slurry that thickens the sauce from a thin liquid into a glossy glaze that clings to the chicken.
  • To garnish: toasted sesame seeds and sliced green onions. Both matter โ€” the sesame seeds add crunch and the green onions add freshness that cuts through the richness of the sauce.

How to Make Air Fryer Sesame Chicken Bites

Step 1 โ€” Set up your dredging station. In one shallow bowl, beat the 2 eggs. In a second shallow bowl, combine the flour, garlic powder, onion powder, salt, and pepper. Cut the chicken into bite-sized pieces.

Step 2 โ€” Dredge the chicken. Working in batches: dip each piece of chicken in the beaten egg, let any excess drip off, then press it into the seasoned flour on both sides. Make sure every piece is fully coated. Place on a plate or lined baking sheet while you finish the rest.

Step 3 โ€” Preheat the air fryer to 400ยฐF for 3โ€“5 minutes.

Step 4 โ€” Air fry in batches. Spray the air fryer basket with cooking spray. Place the coated chicken in a single layer โ€” don’t crowd or overlap, the pieces need space for the coating to crisp. Spray the tops lightly with cooking spray. Cook at 400ยฐF for 10โ€“12 minutes, flipping at the halfway mark. The coating should be golden brown and the chicken cooked through at 165ยฐF internal temp. Repeat with remaining batches.

Step 5 โ€” Make the sauce while the chicken cooks. In a small saucepan, combine soy sauce, honey, rice vinegar, garlic powder, and grated ginger over medium heat. In a small bowl, whisk the cornstarch and water together until fully dissolved. Once the sauce mixture starts to simmer, pour in the cornstarch slurry while stirring constantly. Keep stirring until the sauce thickens and becomes glossy โ€” about 1โ€“2 minutes. Remove from heat and stir in the sesame oil.

Step 6 โ€” Toss and serve. Add all the cooked chicken to a large bowl, pour the sesame sauce over the top, and toss gently until every piece is coated. Sprinkle with toasted sesame seeds and sliced green onions. Serve immediately over steamed jasmine rice or cauliflower rice.

Tips

  • The dredge order matters. Egg first, flour second โ€” always. If you do flour first, the egg slides off and the coating doesn’t adhere properly. The egg creates the glue layer that holds the flour coating on through the air frying.
  • Single layer, always. The coating crisps because hot air circulates around each piece. Stack them and you get steamed chicken with soft coating instead of crispy bites. Three batches is normal for 1ยฝ lbs of chicken โ€” worth it.
  • Sauce on last. The cornstarch coating on the chicken is what gives it crunch. Tossing in sauce right before serving keeps that crunch intact for longer than if you sauce it early. If you want extra sauce for the rice (and you will), double the sauce recipe โ€” it takes an extra 2 minutes and the rice is dramatically better for it.
  • Fresh ginger vs. ground. Fresh ginger on a microplane is noticeably better in this sauce โ€” it’s brighter and more aromatic than ground. If all you have is ground ginger, use ยผ tsp and it still works.
  • Gluten-free version. Swap all-purpose flour for a 1:1 gluten-free flour blend and soy sauce for tamari or coconut aminos. Everything else stays exactly the same. The texture is just as crispy.

What to Serve With Sesame Chicken

  • Jasmine rice โ€” the classic. The sauce drips into the rice and makes the whole bowl genuinely incredible. Make more rice than you think you need.
  • Cauliflower rice โ€” lower carb version, works just as well for soaking up the sauce.
  • Steamed broccoli or snap peas โ€” add vegetables directly to the bowl alongside the rice. The sauce coats the vegetables too and makes them worth eating.
  • Noodles โ€” lo mein or rice noodles tossed with a little sesame oil. The sesame chicken on top turns this into a full noodle bowl situation.

Storage and Reheating

Store in an airtight container in the fridge for up to 4 days. To reheat and get the coating back: air fryer at 375ยฐF for 3โ€“4 minutes. The coating crisps back up and the sauce gets slightly sticky again. Microwave works but the coating goes soft โ€” fine for a quick lunch, not ideal if you want the crunch back.

The sauce can be stored separately and reheated gently on the stove or in the microwave โ€” stir before using since the cornstarch settles.
