3 Ingredient Funfetti Cake Pops (using a box of cake mix)

Easy 3 ingredient funfetti cake pops using a box of cake mix and covered in a sweet white chocolate coating. Cake pops are exactly what they sound like – a cross between a cake batter and a lollipop!

Easy pops cakes

Contrary to popular belief, cake pops are actually incredibly easy to make! What initially got me hooked on these little lollipop cakes, was Starbucks.

Starbucks Cake Pops can easily be recreated at home, with only 3 ingredients. The secret is making cake pops with regular cake mix.

If you love Starbucks like me, but don’t love the price tag, you need to try my Starbucks Spinach Feta Wraps and my Starbucks Bacon And Gruyere Egg Bites.

I remember the first time I made these I was so nervous. I went on a hunt for a cookie scoop, icing sugar, flour, butter, vanilla extract, baking powder, and chocolate chips all at different grocery stores.

Somehow I whipped together a cake mixture, which turned out absolutely delicious, but it was so much work.

The next time I made them I saved myself a lot of time by buying a boxed cake mix. This is a great way to make your life more simple, and I will never go back to my first attempt method.

CAKE POP INGREDIENTS

  • Boxed cake mix of choice – using box cake mix is an easy way to save yourself tons of time in the kitchen, I used Betty Crocker Rainbow Bit. You could also use a gluten free cake mix if you needed these to be gluten free.
  • Frosting of choice – used Betty Crocker Whipped Cream Cheese Frosting. A vanilla frosting would also be great.
  • White chocolate wafers – white candy typically looks more aesthetic on the funfetti cake pops, however dark chocolate wafers would work as well!

The inside of the cakes pops is a combination of cake mixed with frosting, which gives it the gooey soft texture. The cake pop frosting is simply melted chocolate wafers. Add sprinkles if you wish, and you’ve got yourself the best cake pop recipe!

CAKE POP INSTRUCTIONS

I’m going to show you two ways on how to make cake pops. Or as some may like to call it, lollipop cakes.

The First Method

The first is by using a standard cake mix or leftover cake and mixing it in with enough frosting. Then chilling the dough to make cold cake balls, and sticking them into cake pop sticks or popsicle sticks.

Once you have your cake pop ball, you then dip it into melted candy. You will get rid of excess chocolate and allow it to solidify before eating.

The Second Method

The other way to make them is by using cake pop molds. This is where you would add the cake pop batter to a round pan and it would form the cake into donut holes.

Assuming most people don’t have a cake pop machine, I’d recommend choosing the first method.

Start by preparing your cake by package instructions. It’s important to choose a delicious cake for cake pops.

Beat cake mix, water, oil, and eggs in a bowl. Pour the batter into a greased 9×13-inch baking dish or two 8×8-inch round cake dishes and bake in a 350 degree F oven until a toothpick inserted into the center comes out clean.

Let the cake cool completely, then crumble it with a fork in a large bowl or in the baking dish. Stir the frosting into the crumbled cake, cover, and freeze until chilled.

Use your hands to roll the mixture into evenly sized balls. Freeze again until balls are hard.

It’s easier to roll the cake & frosting mixture into perfectly round balls if it’s cold. The cake & frosting mixture is super moist, and at room temperature it makes it extremely difficult to shape them perfectly.

Once they have been frozen, I give them another little roll to smooth out the sides. Then place on a baking sheet.

Making Candy Melt Topping

Melt candy melts in the microwave or in a double boiler. Dip each lollipop stick into the white chocolate, then stick into one of the cake pop balls.

Do this with all of them and put back in freezer till they are solidified.

Gently dip the balls into the melted chocolate or spoon the chocolate onto balls and twirl to coat. Decorate with sprinkles if desired.

The best way to allow the coating to dry and set– without ruining the perfectly round cake pop– is to place them upright in a styrofoam block, or a box to harden. There you have it, you have easy cake pops!

OTHER CAKE POP FLAVOUR COMBINATIONS YOU COULD TRY

  • Red velvet cake pops
  • Birthday cake pops
  • Cookie dough cake pops
  • Vanilla cake pops
  • Chocolate cake pops

These are perfect to bring to baby showers, birthday parties, or any celebration where you want to impress your guests! Homemade cake pops ALWAYS “wow” guests, trust me.

It’s a game changer, and will save you so much time! Not to mention you will make perfect cake pops every time.

The best part about making cake pops is you can use leftover cake crumbs, and mix it in with a small amount of icing and they come out great! You can also customize them but using a gluten free cake mix to make gluten free cake pops.

DIY CAKE POP TIPS

Make sure your cake pops are cold enough before adding the frosting! If they are not cold enough they will change their shape and start to melt once you start trying to frost.

DO NOT use too much frosting inside the cake pop. Typically the more frosting the better on traditional cakes, at least in my opinion, but in cake pops this is not the case.

If you add too much they may become too mushy and much too sweet!

HOW TO STORE THIS EASY CAKE POP RECIPE

The best way to store pre made cake pops is to place them in an airtight container with a paper towel lining the bottom of the container. They will stay fresh for a couple days on the counter, but for best results I recommend storing them in the refrigerator.

    1. Hi Leana,

I just found them at Save On Foods in the sprinkles aisle. They were in a container with a few other types of sprinkles but nothing special, just cute colours! 🙂

  3. BrooklynMom says:

    Wonderful recipe!
We needed about 24oz meltables for 1 box of cake mix.
Day-old cake or older is better.
And the styrofoam we used was 9×12 and 2” thick

  4. Turned out great! Thanks for the recipe 😋
