This low carb tortilla pizza is a crispy, cheesy single-serve pizza made on a low carb tortilla with pizza sauce, shredded cheese, and your favorite toppings, ready in about 13 minutes with no special equipment.

Pizza craving, 13 minutes, no soggy crust. This is the low carb tortilla pizza I make when I want pizza tonight and I want it now.

Low carb tortilla pizza is a quick personal pizza made by crisping a low carb tortilla in the oven, then topping it with pizza sauce, cheese, and toppings and baking until melty. The trick that makes it actually good is pre-baking the bare tortilla first so the crust gets crispy and holds up instead of going limp under the sauce.

You don’t need a pizza pan, stone, or any special equipment, just a baking sheet. Build it however you want: Alfredo sauce for a white pizza, pepperoni and sausage for meat lovers, or fresh basil and tomato for a margherita.

Ingredients

  • Low carb tortilla โ€” the crust. The brand matters here, some crisp up far better than others (see the FAQ for the ones that work best). A taco-size tortilla makes a personal pizza.
  • Pizza sauce โ€” a thin, even layer. Use a low-sugar marinara or pizza sauce to keep the carbs down.
  • Shredded cheese โ€” mozzarella for the classic melt. A low-moisture shredded mozzarella melts best and browns nicely.
  • Italian seasoning โ€” sprinkled over the cheese for that pizzeria flavor.
  • Toppings of choice โ€” pepperoni, fresh tomato, basil, olives, mushrooms, whatever you love.

How to Make Low Carb Tortilla Pizza

  1. Preheat the oven to 350ยฐF. Lightly brush or spray the tortilla with olive or avocado oil on both sides.
  2. Bake the bare tortilla on a baking sheet for 4โ€“5 minutes to crisp it up. This is the step that keeps the crust from going soggy.
  3. Spread the pizza sauce over the crisped tortilla, then add the shredded cheese and Italian seasoning.
  4. Return to the oven and bake for about 4 more minutes, until the cheese is melted and bubbly.
  5. Add any fresh toppings like basil or sliced tomato, cut into 4 slices, and eat.

Tips

  • Watch it the first time. Every oven and tortilla is different. The pre-bake can take 4 minutes or 6 depending on how thin your tortilla is, so check it the first time so you learn your timing.
  • Don’t overload the toppings. Too much sauce or too many heavy toppings weigh the thin crust down and make it soggy. Go light and even.
  • Brush the edges with oil. A little oil around the rim before baking gives you golden, crispy edges like a real thin-crust pizza.

Substitutions and Variations

Use Alfredo sauce for a white pizza. Pesto works too.

Swap the cheese: Mozzarella is classic, but provolone and cheddar both melt well.

Meat lovers: Add cooked sausage, bacon, ham, and pepperoni.

Margherita: Skip the heavy toppings and finish with fresh basil and sliced tomato after baking.

Make it in the air fryer: Air fry the bare tortilla at 375ยฐF for 2โ€“3 minutes to crisp, top it, then air fry another 3โ€“4 minutes until the cheese melts.

To reheat, skip the microwave, it makes the crust soft. Reheat slices on a baking sheet at 375ยฐF for 5โ€“8 minutes, or in the air fryer for 2โ€“3 minutes, to bring back the crispy crust and remelt the cheese.

Ingredients 

  • 1 low carb tortilla
  • ยผ cup pizza sauce
  • ยฝ cup shredded cheese
  • ยฝ tsp Italian seasoning
  • Toppings of choice such as pepperoni slices, fresh tomato, fresh basil, black olives, mushrooms, etc.

Instructions

  • Preheat your oven to 350 degrees F. Lightly spray or brush your tortilla with avocado oil or olive oil.ย 
  • Bake the tortilla in preheated oven on a baking sheet for 4-5 minutes to crisp up. Once crispy, add the pizza sauce and spread all over the tortilla.ย 
  • Top with shredded cheese and italian seasoning. You can add salt + black pepper as well.ย 
  • Put baking trap back into the oven and bake for another 4 minutes until the cheese is melted.
  • Remove the pizza from the oven and place it on a plate. Add fresh toppings of choice such as freshly sliced tomatoes, fresh basil, or grated parmesan cheese. Cut into 4 slices with pizza cutter. Enjoy!
