Simple Ingredients You Need For The Gluten Free Peanut Butter Blondies

  • Gluten free all-purpose flour – any gluten-free flour blends with xanthan gum
  • Golden brown sugar – can also use dark brown sugar, light brown sugar or coconut sugar. I don’t recommend using white sugar.
  • Unsalted Butter – can use vegan butter or regular as long as it’s melted butter.
  • Creamy Peanut Butter – can also use natural peanut butter, or almond butter.
  • Egg 
  • Pure vanilla extract
  • Baking soda
  • Salt
  • White & semi-sweet Chocolate chips – milk chocolate chips, dark chocolate chips or chocolate chunks are also delicious in this recipe.
  • Optional – flaky sea salt, reeseโ€™s pieces, granulated sugar, maple syrup, vanilla ice cream for serving, etc.

How To Make

  1. Preheat the oven to 350 degrees and line an 8×8 baking pan with parchment paper. ย 
  2. In a large mixing bowl, cream the butter and peanut butter with an electric mixer. Add brown sugar and beat for 1-2 minutes until light and fluffy (see photos for reference).
  3. Add the egg and vanilla and beat again until well combined.
  4. In the same bowl, add the dry ingredients to the peanut butter mixture. Mix on low speed ensuring you do not over-mix (it is a very thick batter – see photos for reference).
  5. Fold in chocolate chips using a rubber spatula and pour into the prepared pan and bake for 25-30 minutes. The top will just be starting to turn a very light brown.ย

Store in an airtight container at room temperature for up to 4 days, or in the fridge for up to a week. You can also freeze themโ€”just thaw or microwave for a few seconds when the craving hits.

  • Donโ€™t overmix once you add the flourโ€”this keeps them soft and chewy
  • Use a creamy peanut butter for the best texture

  • ยพ cup peanut butter
  • 1 egg

    These are really good! They taste just like a chocolate chip cookie! I didnโ€™t have white chocolate chips so I used regular chocolate chips and regular butter. Yum!
