  • Mayonnaise – can use light mayonnaise if desired
  • Fresh lime juice
  • Fresh cilantro
  • Garlic powder
  • Salt and black pepper
  • Raw shrimp – deveined and tails removed
  • Cajun seasoning
  • Cumin
  • Chili powder
  • Paprika
  • Corn tortillas – can use flour tortillas if desired
  • Red cabbage
  • Avocado
  • Feta cheese
  • Olive oil – or avocado oil
  • Optional – green onions, cayenne pepper, bell peppers, lime wedges, creole seasoning, red onion, black beans, lemon juice, crispy jalapeños, etc.

HOW TO MAKE

  1. In a small bowl, mix together the light mayo, plain Greek yogurt, fresh lime juice, garlic powder, fresh cilantro, salt, and pepper. Adjust the seasoning to taste. Refrigerate until you’re ready to assemble the tacos.
  2. In a seperatel bowl, toss the shrimp with chili powder, Cajun seasoning, cumin, paprika, salt, and pepper until evenly coated.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they’re pink and cooked through. Remove from heat and set aside.
  4. Warm tortillas in a dry skillet over medium heat for about 30 seconds on each side or until they’re pliable.
  5. Spread a spoonful of the cilantro lime sauce on each tortilla. Top with some sliced red cabbage, crumbled feta cheese, avocado slices, a few shrimp and more fresh cilantro.
  6. If you like, serve with lime wedges on the side for an extra squeeze of fresh lime juice.
