- Small yellow onion – can also use red onion
- Bell peppers
- Can black beans
- Red enchilada sauce
- Flour tortillas – can also use corn tortillas if desired.
- Shredded cheese (cheddar cheese, Monterey Jack cheese, Colby jack cheese, pepper jack cheese, or your favorite)
- Kosher salt and black pepper
