The “skinny” swap means it lands at around 67 calories โ€” compared to 100โ€“160 calories for a Starbucks grande skinny vanilla latte, and over 250 for the regular vanilla latte.

Ingredients You’ll Need

  • Unsweetened almond milk โ€” keeps the calorie count low and froths beautifully. Unsweetened vanilla almond milk works too and adds extra vanilla flavor. Skim milk, oat milk, or fairlife also work.
  • Sugar-free vanilla syrup โ€” Torani and Skinny Syrups are my go-to brands. This is what makes it taste exactly like the Starbucks version. Regular vanilla syrup works if you don’t need it sugar-free.
  • Espresso โ€” two shots. Use an espresso machine, Nespresso, or moka pot. If you don’t have any of those, very strong brewed coffee works in a pinch.

How to Make a Skinny Vanilla Latte

  1. Brew your espresso. Pull two shots using your espresso machine, Nespresso, or moka pot.
  2. Froth the milk. Pour the almond milk and sugar-free vanilla syrup into your milk frother and froth until hot and foamy.
  3. Combine. Pour the espresso into a mug, then slowly pour the frothed milk over top, holding back the foam with a spoon.
  4. Top with foam and enjoy hot.

Variations

  • Iced skinny vanilla latte: Brew the espresso and let it cool. Fill a glass with ice, add the espresso and sugar-free vanilla syrup, stir, then top with cold almond milk. Optionally froth the milk first for cold foam.
  • Decaf: Use decaf espresso. Same recipe, no caffeine.
  • Extra protein: Swap almond milk for Fairlife skim milk โ€” adds ~13g of protein per cup with barely any extra calories.
  • Cinnamon vanilla: Add a dash of cinnamon to the milk before frothing, or sprinkle on top.
