This gluten free high protein pizza crust packs 64g of protein into one personal pizza, crust and toppings included. Made with gluten-free flour, Greek yogurt, and a scoop of protein powder, air fried golden in about 20 minutes.

So this is the one that made pizza night actually fit my macros, and not in a sad little health-food-disc way. A full personal pizza, crust plus sauce plus cheese plus pepperoni, and it comes out to 64g of protein. I went looking at what else was out there when I built this and most protein pizza crusts land around 18 to 25g. This one more than doubles that.

Gluten free high protein pizza crust is a personal-size pizza dough made from gluten-free flour, Greek yogurt, and a scoop of protein powder, then air fried until the edges go golden and crisp. You roll it, par-cook the base so it doesn’t go soggy, then load it and finish it. The whole thing takes about 20 minutes and you’re eating real pizza, not a cauliflower situation.

I’ve been making this version for years, tweaking the flour-to-yogurt ratio until the crust held up under a full load of toppings instead of folding in half. The Greek yogurt does the heavy lifting on texture, the protein powder pushes the number way up, and the air fryer gives you crispy edges without heating the whole oven.

  • Baking powder โ€” turns the flour into self-rising so the crust has a little lift instead of baking flat and dense.

How To Make Gluten Free High Protein Pizza Crust

  1. Preheat your air fryer to 400ยฐF.
  2. In a bowl, whisk together the gluten-free flour, baking powder, protein powder, Italian seasoning, garlic powder, and salt.
  3. Add the Greek yogurt and mix until a dough ball forms. It’ll feel a little sticky, that’s right.
  4. Lightly flour your surface and roll the dough into a pizza shape, keeping the edges a touch thicker so you get a crust to hold onto.
  5. Spray the air fryer basket, lay in the crust, and poke a few holes across it with a fork so it doesn’t bubble up.
  6. Drizzle or spray the top with a little oil. Air fry 5 minutes, then carefully flip and go another 3.
  7. Flip it back, add your sauce, cheese, and toppings, and air fry 2 to 3 more minutes until the cheese melts.
  8. Let it cool a couple minutes before slicing so the crust sets. Then dig in.

Tips For The Best Protein Pizza Crust

Don’t skip the fork holes, they keep the base from puffing into a balloon mid-cook. Roll the edges slightly thicker than the center so you get a real crust and the middle still crisps. And flip gently with a spatula on that first flip, the par-cooked base is sturdy but not invincible.

Topping Ideas

The crust is a blank canvas, so build whatever’s calling your name. A few combos I come back to: classic pepperoni with mozzarella, BBQ chicken with red onion, and a four-cheese with parmesan and provolone.

For more protein on top, pile on grilled chicken, turkey pepperoni, or cooked ground turkey. Margherita with fresh mozzarella and basil keeps it light. Buffalo chicken with a little blue cheese hits when you want some heat.

How To Store And Reheat

This is best fresh, but leftovers keep. Store cooled slices in an airtight container in the fridge for up to 3 days.

To bring back the crisp, reheat in the air fryer at 350ยฐF for 2 to 3 minutes. The microwave works in a pinch but you’ll lose the crunch, so air fryer wins.

Can I make this pizza crust in the oven instead of the air fryer?

Yes. Bake the crust at 400ยฐF until it’s set and lightly golden, then add toppings and bake again until the cheese melts. It takes longer than the air fryer, so keep an eye on it and pull it when the edges crisp.

Can I make it without protein powder?

You can. The crust still works with just the gluten-free flour and Greek yogurt, you’ll just land at a lower protein number. A reader made it without the powder and loved it, then planned to add it next time for the macro boost.

How much protein is in this pizza?

The whole personal pizza, crust and toppings, comes out to about 64g of protein. That’s more than double most protein pizza recipes, which tend to sit around 18 to 25g.

Can I make this dairy free?

Yes. Swap the Greek yogurt for a dairy-free protein yogurt and use a dairy-free cheese on top. A reader subbed Kite Hill protein yogurt and said it still tasted amazing.

Can I freeze the pizza dough?

Yes. Shape the dough into a ball, wrap it tightly, and freeze for up to a month. Thaw in the fridge overnight, let it come to room temp, then roll and cook as usual.

Ingredients

Instructions

  • Preheat your air fryer to 400ยฐF.

  • Lightly flour your work surface and roll out your dough into a pizza shape, leaving the crust a bit thicker.
  • Spray your air fryer basket with non-stick cooking spray and add your pizza crust. Poke a few holes in the crust with a fork.
  • Drizzle the crust with olive oil or more cooking spray. Air fry for 5 minutes then flip the crust, being careful not to break the pizza base, and cook for another 3 minutes.
  • Flip the crust back over then add your sauce, cheese, and pepperoni. Air fry for another 2-3 minutes or until the cheese has melted.
  • Remove the pizza from the air fryer and let it cool for a few minutes before slicing and serving.

    Absolutely loved this and the macros on this are killer! I was able to eat 3/4 of the pizza I made from this crust to fit within my macros. I am also dairy free and subbed the Greek yogurt for kite hill protein yogurt and it still tasted amazing! Definitely recommend if youโ€™re craving pizza but wanting to stay low calorie!
