Taco Shells In The Air Fryer

If you’ve ever bought a box of taco shells only to get home and find half of them crushed, you know the frustration.

Making your own in the air fryer takes about the same amount of time and the result is so much better โ€” fresher, crispier, and they actually hold their shape when you load them up.

I make these every taco Tuesday now and I’m never going back to store-bought.

Ingredients

(Exact measurements are in the recipe card below)

  • Corn or flour tortillas โ€” see below for which to use
  • Oil spray โ€” avocado oil, olive oil, or any neutral cooking spray. A light coat on both sides helps them crisp up and turn golden. Optional but recommended.
  • Taco shell molds or rack โ€” see the no-mold hack below if you don’t have these

Corn vs Flour Tortillas โ€” Which Is Better?

Corn tortillas are the better choice for crispy taco shells. They crisp up faster, hold their shape better, and give you that classic hard shell taco taste โ€” like a corn chip. They’re also naturally gluten-free.

Flour tortillas work too, but they don’t get as crunchy. They stay a bit softer and chewier โ€” closer to a toasted wrap than a hard taco shell. If crunchy is your goal, go with corn.

Use fresh tortillas. Old or refrigerator-cold tortillas are more brittle and crack when you try to fold them. If yours came from the fridge, warm them in the microwave for 10โ€“15 seconds first.

How To Make Air Fryer Taco Shells

  1. Preheat your air fryer to 400ยฐF for 2โ€“3 minutes.
  2. Warm the tortillas โ€” microwave them for 10โ€“15 seconds wrapped in a damp paper towel. This makes them pliable so they fold without cracking.
  3. Spray with oil โ€” lightly coat both sides of each tortilla with oil spray.
  4. Shape and place โ€” drape each tortilla over a taco shell mold or rack and place in the air fryer basket. (No mold? See the foil hack below.)
  5. Air fry at 400ยฐF for 3โ€“5 minutes until golden and crispy. Keep an eye on them โ€” every air fryer runs a little differently and they can go from golden to burnt fast. Check at the 3-minute mark.
  6. Cool before filling โ€” let them sit for 1โ€“2 minutes. They crisp up even more as they cool.

No Taco Mold? Use This Foil Hack

Don’t have taco shell stands? No problem. Crumple a piece of aluminum foil into a long, cylinder-shaped roll โ€” about the same width as your tortilla. Place it in the air fryer basket and drape the tortilla over it. The foil acts as a stand and holds the shell open as it cooks. Make as many foil rolls as you need for the batch.

You can also drape tortillas over the bars of your air fryer rack if your model has one โ€” no foil needed.

Tips For The Crispiest Shells

Don’t skip the warm-up. Cold, stiff tortillas will crack when you try to fold them. Ten seconds in the microwave makes all the difference.

Oil both sides. The oil is what gets you that golden color. One side only = uneven crisping.

Don’t overcrowd the basket. Give each shell space so hot air can circulate all the way around. Cook in batches if needed.

Watch them closely. Taco shells can go from perfect to burnt in under a minute. Start checking at the 3-minute mark, especially the first time you make them.

Every air fryer is different. Some run hotter than others. Your first batch is a test โ€” adjust time up or down from there.

Filling Ideas

You can fill these with anything, but some favorites:

  • Seasoned ground beef with taco seasoning
  • Shredded chicken or pulled pork
  • Black beans and cheese (great vegetarian option)
  • Spicy fish or shrimp
  • Ground turkey with jalapeรฑo

Topping Ideas

Set up a taco bar and let everyone build their own:

  • Shredded cheddar or Monterey Jack
  • Sour cream or Greek yogurt
  • Salsa or pico de gallo
  • Guacamole or sliced avocado
  • Shredded lettuce
  • Hot sauce
  • Fresh lime juice

Storage

Air fryer taco shells are best eaten fresh โ€” the crunch fades as they sit. If you have leftovers, let them cool completely and store in an airtight container on the counter (not the fridge โ€” refrigeration makes them soggy) for up to 2โ€“3 days. Do not freeze cooked taco shells โ€” the oil absorbs into the shell when frozen and they turn mealy when thawed.

For make-ahead, store uncooked tortillas in the fridge and air fry them fresh when you’re ready to eat.

What Else Can You Make With This Method?

Once you’ve got the technique down, tortillas in the air fryer open up a lot of possibilities:

  • Tostadas โ€” skip the molds and leave tortillas flat in the basket. Air fry at 400ยฐF for 3โ€“4 minutes until crispy and flat. Top with beans, cheese, avocado.
  • Tortilla chips โ€” cut tortillas into triangles, spray lightly with oil, and air fry at 350ยฐF for 4โ€“5 minutes, shaking halfway. Perfect with guacamole or salsa.
  • Taco bowls โ€” drape a large flour tortilla over an oven-safe bowl or shape it inside a ramekin and air fry until it holds its bowl shape.
