Air Fryer Spicy Buffalo Chicken Tenders (Crispy + Gluten Free)

Chicken breast sliced into strips, dredged in seasoned flour, egg, and panko, air fried at 400ยฐF until golden, then tossed in a Frank’s RedHot butter sauce and back in for 2 minutes to caramelize. Done in under 30 minutes and genuinely one of the crispiest things that comes out of my air fryer.

Buffalo chicken tenders are the recipe I make when I want something that feels like it came from a sports bar but costs $4 and takes 30 minutes.

The three-stage dredge (flour, then egg, then panko) is what gives you that proper crunch โ€” the layers build on each other so the coating actually stays on through the air frying instead of sliding off. Then the Franks and butter sauce go on at the end, and the whole coating caramelizes into something genuinely great.

Serve them with ranch and celery sticks, and nobody is thinking about the fact that these aren’t deep-fried. Gluten-free with a simple flour swap โ€” use a 1:1 GF flour blend and gluten-free panko, and nothing else changes.

Ingredients You’ll Need

For the chicken:

  • 1 lb boneless skinless chicken breast โ€” sliced into tender-sized strips against the grain, roughly 1 inch wide and 4โ€“5 inches long. You can also use actual chicken tenderloins if you find them at the store โ€” they’re already the right size and slightly more tender than sliced breast.
  • 1 cup all-purpose flour โ€” the first coating layer. Seasoned flour sticks to the raw chicken and gives the egg wash something to grab onto. For gluten-free: swap 1:1 with any GF flour blend.
  • Spice blend for the flour: 2 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp cayenne pepper (adjust for heat), 1 tsp salt, ยฝ tsp black pepper. Mix into the flour before dredging.
  • 2 large eggs โ€” beaten. The egg is the glue layer between the flour and the panko. Optional upgrade: add 2 tablespoons of Frank’s hot sauce directly to the beaten eggs before dredging โ€” this builds buffalo flavor into the breading itself, not just the sauce on top.
  • 1 cup panko breadcrumbs โ€” gives you a crunchier, lighter crust than regular breadcrumbs. For gluten-free: swap for gluten-free panko (same crunch, direct 1:1 swap).
  • Cooking spray โ€” spray the basket before the tenders go in, and a light spray over the tops of the coated tenders.

For the buffalo sauce:

  • ยฝ cup Frank’s RedHot Original โ€” the only buffalo sauce. Frank’s specifically because of the cayenne pepper base and vinegar tang that makes proper buffalo sauce taste the way it does. Other hot sauces work, but the flavor profile will be different.
  • 1 tablespoon unsalted butter, melted โ€” mixed with the Frank’s to round out the heat and add richness. The butter-to-hot-sauce ratio here is leaner than classic buffalo sauce, which gives you the heat without making the coating greasy. Add more butter (up to 2 tbsp) if you want a richer sauce.

How to Make Air Fryer Buffalo Chicken Tenders

Step 1 โ€” Set up the dredging station. Three shallow bowls: Bowl 1 has the seasoned flour (flour + all spices, mixed). Bowl 2 has the beaten eggs (add 2 tbsp Frank’s here if using the upgrade). Bowl 3 has the panko.

The one-hand rule: use one hand for the dry bowls (flour and panko) and the other hand for the wet bowl (egg). Keeping your dry hand dry prevents the flour from clumping into the egg bowl and turning into a papier-mรขchรฉ situation on your fingers.

Step 2 โ€” Slice and dredge. Slice the chicken into tender strips. Working one at a time: press into the seasoned flour, shake off excess, dip in egg, let excess drip off, press firmly into panko on both sides. Lay on a plate while you finish the rest.

Step 3 โ€” Preheat to 400ยฐF for 3โ€“5 minutes.

Step 4 โ€” Air fry in batches. Spray the basket. Lay tenders in a single layer โ€” don’t overlap, the coating needs full air circulation to crisp. Spray the tops lightly. Air fry at 400ยฐF for 11โ€“13 minutes, flipping at the halfway mark. The panko should be deep golden and the coating firm.

Step 5 โ€” Make the buffalo sauce. While the tenders cook, whisk together the Frank’s and melted butter in a large bowl.

Step 6 โ€” Sauce and finish. When the tenders come out, add them to the bowl with the buffalo sauce and toss gently to coat. Be careful here โ€” toss gently rather than aggressively so the panko coating stays on. Place them back in the air fryer for 2โ€“3 minutes at 400ยฐF. The sauce caramelizes on the coating and you get a glossy, sticky exterior that’s completely different from just dipping them in sauce at the table.

Step 7 โ€” Rest 2 minutes, serve immediately. Plate with ranch or blue cheese and fresh celery sticks. These are at their best the moment they come out.

Tips for Air Fryer Buffalo Chicken Tenders

  • Dredge in order. Flour first, egg second, panko third โ€” always. If you skip the flour or do it in the wrong order, the egg slides off the raw chicken, and the panko has nothing to stick to. The flour creates the surface texture the egg needs.
  • The one-hand rule. One hand for dry bowls, one for wet. Keeps the process clean and prevents your dry hand from getting coated in egg and turning everything into one sticky mess.
  • Single layer and batches. The panko coating crisps because hot air circulates around each tender. Stack them, and you get steam, not crunch. Three batches from 1 lb of chicken is normal.
  • Add Frank’s to the egg wash. Optional, but it makes a real difference โ€” mixing 2 tbsp of hot sauce into the beaten eggs builds buffalo flavor into every layer of the breading, not just the outer coating. The tenders taste of buffalo all the way through.
  • Back in the air fryer after saucing. The 2-3 extra minutes after tossing in buffalo sauce are not optional if you want the right texture. The sauce caramelizes onto the coating and goes from wet to glossy and slightly sticky โ€” completely different from sauced-at-the-table tenders.
  • Gluten-free version. Swap all-purpose flour for a 1:1 GF flour blend and regular panko for gluten-free panko. Nothing else changes. The texture is identical. Frank’s Original is gluten-free โ€” check the label on any other hot sauce you use.
  • 165ยฐF internal temp. Use a meat thermometer at the thickest part of the strip โ€” done at 165ยฐF.

Ways to Serve These

Classic โ€” ranch and celery sticks. The non-negotiable. Cold ranch against the spicy crispy tender is the whole point.

Blue cheese. The traditional buffalo wing pairing and equally good here. Blue cheese crumbles on top of the plated tenders is the move if you’re feeling extra.

Buffalo chicken salad. Slice the cooked tenders and lay them over romaine with cherry tomatoes, avocado, corn, and ranch dressing. One of the best lunches I make.

In a wrap. Warm tortilla, two tenders, shredded lettuce, sliced avocado, drizzle of ranch. Five-minute lunch that uses leftovers brilliantly.

Over fries. Chop the tenders and pile over air fryer fries with extra buffalo sauce and blue cheese crumbles. Game day in a bowl.

Storage and Reheating

Store in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 375ยฐF for 3-4 minutes โ€” the coating crisps back up, and the sauce gets slightly caramelized again. Don’t microwave โ€” the coating goes completely soft.

Freeze cooked tenders on a parchment-lined sheet until solid, then transfer to a freezer bag โ€” up to 2 months. Reheat straight from frozen at 375ยฐF for 6-8 minutes.

Frequently Asked Questions

How long do you cook buffalo chicken tenders in the air fryer? Cook at 400ยฐF for 11โ€“13 minutes, flipping halfway through. Then toss in buffalo sauce and return to the air fryer for 2โ€“3 more minutes to caramelize the coating. Total active cook time is about 13โ€“16 minutes. The tenders are done when the panko is deep golden, the coating is firm, and an instant-read thermometer reads 165ยฐF at the thickest part.

Can I make air fryer buffalo chicken tenders gluten-free? Yes โ€” swap all-purpose flour for a 1:1 gluten-free flour blend and regular panko for gluten-free panko. Both are direct substitutions that don’t change the method or the texture. Frank’s RedHot Original is gluten-free. Check the label on any other hot sauce you use.

Can I use chicken tenderloins instead of chicken breast? Yes โ€” actual chicken tenderloins work great and are slightly more tender than sliced breast because of the muscle fiber direction. No slicing needed โ€” they’re already the right size. Cook time is the same.

How do I keep the panko coating from falling off? Three things: pat the chicken dry before dredging (moisture on the surface prevents the flour from adhering), use the correct dredge order (flour โ†’ egg โ†’ panko, always), and press the panko firmly onto the chicken rather than just dipping it in. The coating should feel packed on before it goes into the air fryer. Toss gently in the sauce after cooking rather than aggressively stirring.
