I stopped paying $6 for a cinnamon dolce latte the day I realized the syrup is just a few things I already had in my pantry. This copycat Starbucks cinnamon dolce syrup takes 15 minutes and makes enough for a couple of weeks of lattes at home.

Cinnamon dolce syrup is a sweet cinnamon simple syrup, made by simmering water, white and brown sugar, vanilla, and cinnamon until it goes glossy and pourable. Starbucks uses it in their cinnamon dolce lattes, and one batch at home costs a fraction of a single drive-thru run.

I keep a jar in my fridge all through fall and winter and stir it into hot coffee, cold brew, oatmeal, all of it. It’s naturally gluten-free and vegan, and you can make it sugar-free if that’s your thing.

What Is Cinnamon Dolce Syrup

Dolce is the Italian word for sweet, so cinnamon dolce is basically sweet cinnamon. The syrup gets its depth from using both white and brown sugar, where the brown sugar brings a caramel note that a plain simple syrup doesn’t have. That brown sugar layer is what makes it taste like the Starbucks version and not just cinnamon water.

Ingredients You Need

  • Water โ€” the base of the syrup.
  • White sugar โ€” the clean sweetness and the bulk of the syrup. Swap in monk fruit or another granulated sweetener for a sugar-free version.
  • Brown sugar โ€” the trick to that caramel depth. This is what separates cinnamon dolce from a plain cinnamon syrup.
  • Vanilla โ€” rounds out the cinnamon and adds warmth.
  • Cinnamon โ€” ground cinnamon is fast and what I usually reach for. Cinnamon sticks give a clearer, less gritty syrup if you don’t mind straining, so use whichever you have on hand.

How to Make Cinnamon Dolce Syrup

  1. Dissolve the sugars. In a small saucepan, stir together the water, white sugar, brown sugar, and vanilla over medium heat until the sugar dissolves.
  2. Add cinnamon and boil. Stir in the cinnamon and bring it to a boil over medium-high heat.
  3. Simmer. Drop the heat and simmer for 5 minutes, so it thickens slightly and the cinnamon flavor comes through.
  4. Cool and bottle. Take it off the heat, let it cool for 10 minutes, then pour it into a clean jar or bottle.

Ways to Use It

  • Coffee and lattes: stir a tablespoon or two into hot coffee, cold brew, or espresso.
  • Breakfast: drizzle it over oatmeal, yogurt, or pancakes.
  • Treats: swirl it into hot chocolate or over a scoop of ice cream.

Turn It Into a Cinnamon Dolce Latte

Variations

  • Sugar-free: swap the white and brown sugar for monk fruit or your favorite granulated sweetener.
  • Extra caramel: use a little more brown sugar and a little less white for a deeper, richer syrup.
  • Stronger spice: add a pinch more cinnamon, or use a fresh cinnamon stick for a cleaner finish.

Storing It

Store the syrup in a sealed mason jar or bottle in the fridge for up to 2 weeks. It can separate as it sits, so give it a shake before each use.

Ingredients 

  • ยฝ cup filtered water
  • ยฝ cup white sugar
  • ยผ cup brown sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon

Instructions

  • In a small saucepan, combine the water and, white sugar, brown sugar and vanilla extract and stir until the sugar dissolves.
  • Add the cinnamon to the saucepan and bring the mixture to a boil over medium-high heat.
  • Reduce the heat and let the mixture simmer for 5 minutes.
  • Remove the saucepan from the heat and let it cool at room temperature for 10 minutes.
  • Pour the mixture into a clean bottle or container. Enjoy with coffee, lattes or cappuccinos.
