These smash burger tacos take everything you love about a Big Mac โ€” crispy beef, melty American cheese, special sauce โ€” and fuse it with a crispy tortilla. 15 minutes start to finish, zero drive-thru required.

Smash burger tacos are thin patties of ground beef smashed directly onto a flour tortilla, seared until crispy, topped with American cheese, shredded lettuce, pickles, and Big Mac sauce. They cook in 4 minutes total and taste like the lovechild of a Big Mac and a crispy taco.

I made this version when smash burger tacos first went viral in 2023, and after testing it 30+ ways I landed on the formula that works every single time: thin layer of beef, ripping-hot pan, American cheese for melt, and homemade Big Mac sauce that’s better than the drive-thru. The whole thing takes 15 minutes. You will make these on repeat.

Ingredients You’ll Need

(Exact measurements are in the recipe card below. These are notes only.)

For the tacos:

  • Lean ground beef โ€” 85/15 or 90/10 works best. Too lean (93/7+) and the patties dry out; too fatty (80/20) and the pan floods with grease.
  • Small flour tortillas โ€” 5-6 inch fajita-size tortillas hold up best. Corn tortillas crack and get soggy, so skip them unless you’re set on gluten-free.
  • American cheese singles โ€” the classic Big Mac cheese. Melts faster than shredded cheddar and gives you that authentic burger pull.
  • Shredded iceberg lettuce โ€” for that Big Mac crunch.
  • Sliced dill pickles โ€” the chip-cut ones layer best.
  • Chopped white onion โ€” red onion works too if you prefer milder.
  • Salt and black pepper โ€” to taste.

For the Big Mac sauce:

  • Mayonnaise โ€” full-fat works best, Greek yogurt for a lighter version.
  • Ketchup โ€” adds sweetness and that signature pink color.
  • Yellow mustard โ€” for tang.
  • Sweet pickle relish โ€” gives the sauce its texture and that distinct Big Mac flavor.
  • White vinegar โ€” sharpens everything.
  • Onion powder, garlic powder, paprika โ€” the spice trio that turns mayo-ketchup-mustard into actual Big Mac sauce.

How to Make Smash Burger Tacos

  1. Make the Big Mac sauce. Whisk together mayonnaise, ketchup, mustard, sweet pickle relish, white vinegar, onion powder, garlic powder, and paprika in a small bowl. Refrigerate while you cook the tacos (the flavors get better as it sits).
  2. Prep the beef. Divide the ground beef into 8 equal portions. Place one portion on each tortilla and press into a thin, even layer using your fingers or the back of a spoon. Leave a small border at the edge so the beef cooks evenly. Season generously with salt and pepper.
  3. Heat your pan ripping hot. Cast iron or a heavy stainless skillet over medium-high heat. The pan should be hot enough that a drop of water sizzles and evaporates instantly. This is the most important step. A cold pan = no crust = sad tacos.
  4. Cook beef-side down for 2-3 minutes. Place the tortilla beef-side down in the dry hot pan. Do not move it. The beef should sear, crust, and start browning at the edges. If it’s not crisping in 2 minutes, your pan isn’t hot enough.
  5. Flip and add cheese. Flip the tortilla so the beef is now facing up. Add a slice of American cheese on top. Cover with a lid for 1-2 minutes to trap heat and melt the cheese while the tortilla bottom crisps.
  6. Top and serve immediately. Transfer to a plate. Top with shredded lettuce, pickles, chopped onion, and a generous drizzle of Big Mac sauce. Fold and eat right away.

Tips for the Best Smash Burger Tacos

  • Get your pan ripping hot. The crust on the beef is everything. A medium-hot pan gives you steamed beef. A screaming-hot pan gives you a Maillard crust that tastes like a real smash burger.
  • Press the beef THIN. Aim for ยผ inch thick or less. Thick beef won’t crisp the same way and takes too long to cook through.
  • Don’t move the beef while it cooks. Resist the urge to peek or shuffle. The crust forms when the beef stays in full contact with the hot pan.
  • Cover with a lid for cheese melt. This is the move competitors skip. Trapping the heat for 60 seconds melts the cheese without burning the tortilla.
  • American cheese is non-negotiable. Yes, real cheese is better in most contexts. For Big Mac flavor, American is the right answer. It melts in a way shredded cheese can’t replicate.
  • Make extra sauce. It keeps in the fridge for 5 days and is incredible on burgers, fries, and chicken nuggets.

Variations and Substitutions

  • Gluten-free: Use grain-free or gluten-free tortillas. Siete almond flour tortillas work well.
  • Lower carb: Skip the tortilla entirely and make as smash burger patties served over shredded lettuce with all the toppings. Or try my Big Mac Bowl instead.
  • Higher protein: Use 93/7 lean ground beef and pile extra cheese.
  • Spicy version: Add a pinch of cayenne to the Big Mac sauce or top with sliced jalapeรฑos.
  • Add tomatoes: Diced tomatoes add freshness if you want to deviate from Big Mac purity.
  • Different cheese: Cheddar, pepper jack, or Monterey jack all work, but the flavor moves away from Big Mac territory.

What to Serve With Smash Burger Tacos

  • A diet coke (the only acceptable beverage, in my opinion)

Storage and Reheating

These are best eaten immediately, but if you have leftovers:

  • Fridge: Store assembled tacos without toppings in an airtight container for up to 3 days.
  • Freezer: Wrap cooked tacos (no toppings) individually in foil, freeze up to 2 months. Reheat in a 375ยฐF oven for 8-10 minutes or air fryer for 4-5 minutes until crispy.
  • Big Mac sauce: Stores separately in the fridge for up to 5 days.
  • Reheating tip: Skillet over medium heat for 2-3 minutes per side beats the microwave every time. Microwave makes the tortilla rubbery.

FAQs

Are smash burger tacos the same as Big Mac tacos? Same recipe, different name. The “smash burger” part refers to the cooking technique (smashing beef into the tortilla on a hot pan). The “Big Mac” part refers to the flavor profile (American cheese, special sauce, shredded lettuce, pickles, onions). Together you get a smash burger taco that tastes like a Big Mac.

What kind of beef is best for smash burger tacos? 85/15 or 90/10 lean ground beef. Higher fat (80/20) floods the pan with grease. Lower fat (93/7) dries out when smashed thin. The 85/15 sweet spot gives you a crispy crust and juicy interior.

Can you make smash burger tacos on a flat top griddle? Yes โ€” and honestly it’s even better than a skillet. A flat top griddle holds heat more consistently and gives you more surface area, so you can make 4-6 tacos at once. Cook the same way: ripping hot, beef-side down, don’t move them.

Why isn’t my beef crispy? Almost always because the pan isn’t hot enough. Smash burgers need a screaming-hot surface to develop a crust. If your beef looks gray instead of browned, crank the heat and wait for the pan to fully preheat (5 minutes minimum on medium-high).

Can I make these ahead of time? The Big Mac sauce can be made 5 days ahead. The beef-on-tortilla can be assembled and refrigerated for a few hours before cooking. But the tacos themselves are best cooked and eaten immediately โ€” the crispy crust doesn’t survive reheating perfectly.

Ingredients 

FOR THE BIG MAC SAUCE

  • ยฝ cup mayonnaise can use light mayo or sub 1/2 mayo 1/2 plain greek yogurt for higher protein version
  • 2 tbsp ketchup can use sugar-free
  • 1 tbsp yellow mustard
  • 2 tbsp sweet pickle relish
  • 2 tsp white vinegar or apple cider vinegar
  • ยฝ tsp garlic powder
  • ยฝ tsp onion powder
  • ยฝ tsp paprika

FOR THE TACOS

  • 600 g lean ground beef
  • Salt and black pepper to taste
  • 8 small flour tortillas
  • 1 cup shredded iceberg lettuce
  • 24 sliced pickles
  • ยฝ small white onion chopped
  • 8 light cheese singles

Instructions

  • In a small bowl, whisk together mayonnaise, ketchup, mustard, sweet pickle relish, white vinegar, onion powder, garlic powder, and paprika. Refrigerate until ready to use.
  • Divide the ground beef into equal portions. Press each portion onto the tortilla shells in a thin later, then season with salt and black pepper. Cook beef side down for 2-3 minutes in a medium skillet.
  • Flip each tortilla over and top with a slice of cheese. Cook for 1-2 more minutes covered on high heat until cheese melts.
  • Top with shredded lettuce, pickles, chopped onion, and a generous drizzle of Big Mac sauce. Serve immediately.

Notes

Can use corn tortillas, however they don't hold up as well.
Can use shredded cheese instead of kraft singles.
