Frozen Panko Halibut in the Air Fryer (Easy Recipe)
How to cook frozen panko-breaded halibut straight from the freezer in the air fryer โ 375ยฐF for 14โ17 minutes, no thawing needed, and the panko coating comes out genuinely crispy in a way the oven never quite manages.

Frozen panko halibut is one of those freezer staples I keep on hand for when I want something that feels like a proper dinner and takes about 15 minutes. The pre-breaded frozen fillets go straight from the freezer into the air fryer โ no thawing, no breading station, no mess โ and the panko coating crisps up beautifully at 375ยฐF in a way you just don’t get from the oven.
Halibut specifically is worth knowing: it’s a firm, meaty white fish with a mild, buttery flavor, and it stays flaky and moist inside while the coating goes golden on the outside. This is the recipe I make when I want something fast that genuinely feels like restaurant-quality food on a Tuesday night.

Ingredients
Frozen panko-breaded halibut fillets โ the pre-breaded frozen product, not raw halibut. These are available at Costco (Kirkland brand), Trader Joe’s, and most grocery store frozen sections. The panko coating is already applied and seasoned โ you just need to cook it. Any brand works; the method is the same.
Cooking spray โ a light spray of avocado oil or olive oil over the frozen fillets before they go in helps the panko coating brown faster and get crispier. Optional but worth doing.

How to Cook Frozen Panko Halibut in the Air Fryer
Step 1. Preheat to 375ยฐF for 3โ5 minutes. Starting with a fully preheated air fryer means the panko starts crisping immediately instead of gradually warming up.
Step 2. Place the frozen fillets in a single layer in the air fryer basket. No overlapping โ the panko coating needs hot air circulating on all sides to get crispy. If you’re cooking more than two fillets, do it in batches.
Step 3. Spray lightly with cooking spray over the top of the fillets. This is optional but gives the panko a noticeably better golden color and crunch.

Step 4. Air fry at 375ยฐF for 14โ17 minutes, flipping at the halfway mark with tongs. After the flip, the top side should already be golden โ you’re finishing the bottom now and getting even color on both sides.
Step 5. Check for 145ยฐF. The fillets are done when the internal temperature reads 145ยฐF at the thickest point and the coating is deep golden all over. Halibut at 145ยฐF is moist and flaky โ not dry. If your air fryer runs cool, check at 17 minutes and add a minute or two.
Step 6. Rest 2 minutes before serving. The fish firms up slightly as it rests and holds together better when you pick it up or flake it.
Why 375ยฐF and Not 400ยฐF?
Most air fryer recipes use 400ยฐF, and for a lot of proteins that’s fine. But with pre-breaded frozen fish, 375ยฐF is better โ the panko coating can go from golden to too dark quickly at higher heat, especially on a pre-seasoned frozen product where the coating is thinner than a homemade bread job. 375ยฐF gives the inside time to thaw and cook through while the outside gets properly golden without burning the edges. If your specific air fryer runs cool, bump to 380ยฐF and add a minute.
Best Dipping Sauces
The panko coating on halibut is mild enough to work with almost anything. These are the sauces I reach for:
- Tartar sauce โ the classic. Tangy, creamy, and cuts through the mild richness of the halibut. A good store-bought version is fine, or make it in 2 minutes: mayo + dill pickle relish + fresh lemon juice + a little Dijon.
- Chipotle mayo โ 3 tbsp mayo + 1 tsp chipotle in adobo (or chipotle powder) + squeeze of lime. Smoky and slightly spicy. This is the one I make most often because it works on everything.
- Garlic aioli โ mayo + 1 minced garlic clove + fresh lemon juice + pinch of salt. Simple and really good with the panko coating.
- Sweet Thai chili sauce โ the same sauce that goes with the Kirkland shrimp. The sweetness and mild heat work with halibut too.
- Lemon butter โ 2 tbsp melted butter + fresh lemon juice + a little fresh dill if you have it. Pour it over the cooked fillet instead of dipping.

How to Serve Frozen Panko Halibut
Straight with dipping sauce and lemon โ exactly as it comes out of the air fryer, with a squeeze of lemon and tartar sauce or chipotle mayo on the side. This is the fastest version and honestly all it needs.
Fish tacos โ this is the one I get the most excited about. Flake the cooked halibut into warm corn tortillas with shredded purple cabbage, sliced avocado, and the creamy sauce from my Fish Tacos Recipe. The panko coating holds up surprisingly well once flaked โ you get pieces with intact crunchy coating in every taco. SO good.
Over rice โ jasmine rice, a drizzle of soy sauce or teriyaki sauce, some steamed edamame. The halibut sits on top and you eat it all together. Easy, filling, done.
With roasted vegetables โ air fryer frozen veggies cook at the same temperature and overlap in time โ run the vegetables first, then the halibut. Dinner done in 30 minutes.
Fish sandwich โ on a toasted gluten-free bun with shredded cabbage, tartar sauce, and a slice of tomato. Tastes like a proper restaurant fish sandwich for $4 at home.
Tips
Single layer, always. The panko coating crisps because hot air circulates all around the fillet. Overlapping or stacking means the touching sides go soft instead of golden. Two fillets per basket is usually the right number โ do batches if you’re cooking for more people.
Spray it. The light coating of oil before cooking is worth doing โ the panko goes noticeably darker and crispier. Avocado oil spray is the best option at air fryer temperatures.
Don’t open and check constantly. Every time you open the air fryer you’re letting heat out. Check at the flip (halfway) and then again at 14 minutes. That’s it.
Serve immediately. Panko coating softens as it sits โ these are at their best the moment they come out. If you’re cooking multiple batches, eat the first batch while the second cooks rather than holding everything.
The tartar sauce makes it. Whatever else you serve with this, make sure there’s a dipping sauce. A good piece of crispy fish with nothing to dip into is a missed opportunity.
Storage and Reheating
Store leftovers in an airtight container in the fridge for up to 3 days. To reheat and get the panko coating back: air fryer at 350ยฐF for 3โ4 minutes. Don’t microwave โ the coating goes completely soft and the fish steams instead of crisping back up. The reheated version is good enough for flaking into fish tacos the next day even if it’s not quite as crispy as fresh out of the fryer.
