- certified gluten-free oats – can also use quick oats or old-fashioned oats for a non gluten free option
- gluten-free oat flour – can make oat flour by blending oats in high powered blender or food processor – can also use almond flour
- baking powder
- cinnamon
- pinch of salt
- coconut oil – can also use vegan butter or almond butter
- brown sugar – coconut sugar also works well here
- pure maple syrup
- large eggs
- vanilla extract
- unsweetened almond milk
- dark chocolate chips – can also use chocolate chunks or dairy-free chocolate chips
HOW TO MAKE THESE HEALTHY OATMEAL BARS
- Preheat your oven to 350 degrees F and grease a 8×8″ baking pan.
- In a large bowl, whisk together the gluten-free oats, gluten-free oat flour, baking powder, cinnamon and salt. Set aside.
- In a large mixing bowl, combine the melted coconut oil, brown sugar, and maple syrup. Mix until well combined.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and almond milk.
- Gradually add the dry ingredients to the wet ingredients, mixing at a medium speed or until just combined. Fold in chocolate chips.
- Pour the batter evenly into the prepared baking pan.
- Bake in the preheated oven for 22-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs (but not wet).
- Allow the cookie bars to cool completely in the pan before cutting them into squares or bars.
