Cinnamon Roll Protein Overnight Oats (30g Protein)

These cinnamon roll protein overnight oats taste like the gooey center of a cinnamon bun, with a white chocolate cream cheese ganache on top that sets like frosting overnight. Ten minutes of prep tonight, 30g of protein tomorrow morning.

I’m a high-protein overnight oats FIEND. An absolute fiend, I tell you. If cinnamon roll protein overnight oats were a food group, I’d be the healthiest human alive. End of story.

Cinnamon roll protein overnight oats are rolled oats soaked overnight with almond milk, chia seeds, cinnamon, and vanilla protein powder, then topped with a white chocolate, cream cheese, and Greek yogurt ganache that sets like cinnamon roll icing. One jar has 30g of protein and takes 10 minutes to prep.

One of you told me these taste like Cinnamon Toast Crunch, and I’m taking that as the highest compliment this recipe will ever get.

Ingredients for Cinnamon Roll Protein Overnight Oats

Exact amounts are in the recipe card below.

For the Oats

  • Rolled oats or quick oats: stick with these, because steel-cut oats won’t soften overnight.
  • Almond milk: any milk works here, dairy or not.
  • Chia seeds: soak up the extra liquid so the oats set thick instead of soupy.
  • Vanilla protein powder: this is where most of the protein comes from. I use PEScience Gourmet Vanilla, and code BAILEY saves you money at checkout.
  • Cinnamon: the entire cinnamon roll flavor lives here.

For the Cream Cheese Ganache

  • White chocolate: once it’s melted and chilled, it’s what makes the topping set up like frosting.
  • Cream cheese: gives the ganache that cinnamon roll icing tang.
  • Plain Greek yogurt: keeps the topping thick and adds even more protein.

How to Make Cinnamon Roll Protein Overnight Oats

Any container works for this, whether it’s a mason jar, a Tupperware, or a bowl.

1. Stir the oats, chia seeds, cinnamon, protein powder, and almond milk together in your container, then pop it in the fridge while you make the topping.

2. Melt the white chocolate in the microwave in 30-second bursts, stirring between each one.

3. Whisk the cream cheese and Greek yogurt into the melted white chocolate until there are zero clumps. Let the cream cheese and yogurt sit out for a few minutes first. Ice-cold dairy can make melted white chocolate seize up and turn grainy.

4. Spread the ganache over the oats and refrigerate for at least 4 hours, or overnight, until it sets.

5. Sprinkle with cinnamon in the morning and eat it cold. If you like your oats warm, lift the ganache off first, microwave the oats, then put the ganache back on top.

Variations

  • Dairy-free: use a plant milk, a plant-based protein powder, vegan white chocolate, vegan cream cheese, and thick coconut yogurt.
  • Gluten-free: use certified gluten-free oats.
  • Sweeter oats: stir in brown sugar, maple syrup, or vanilla extract.
  • Vanilla Greek yogurt: it works in the ganache, but leave out the white chocolate so the topping isn’t too sweet.
  • Gingerbread: one reader turned these into a gingerbread version and gave it five stars.

How to Store Protein Overnight Oats

Keep the jars covered in the fridge, ganache and all, for up to 4 days. Readers batch these during weekly meal prep, so a full week of breakfasts takes one 10-minute session. You can freeze them too, but the texture changes the longer they’re frozen.

A super yummy and satisfying way to start your day! I prep for the week to make an easy grab and go in the morning. This flavor reminds me of my favorite “treat” cereal, Cinnamon Toast Crunch.
