Biscoff Yogurt Cup With Magic Shell (20g Protein, 5 Minutes)

This Biscoff yogurt cup is a high-protein dessert made with Greek yogurt, vanilla protein powder, and a Biscoff magic shell topping that hardens in the freezer โ€” 20 grams of protein, ready in 5 minutes, and tastes like a Biscoff cheesecake.

This Biscoff yogurt cup is basically what happens when a Biscoff cheesecake and a Greek yogurt cup have a five-minute baby. You get creamy, protein-packed yogurt on the bottom, a layer of melted Biscoff spread that hardens into a crackable shell on top, and crushed Biscoff cookies for that cookie butter crunch.

The whole thing takes 5 minutes to make and 15 minutes to set. That’s faster than DoorDash and significantly more satisfying.

The magic shell moment โ€” when your spoon cracks through that hardened Biscoff layer โ€” is genuinely one of the more joyful things to happen in a kitchen.

Ingredients You’ll Need

(Full measurements are in the recipe card below.)

  • Plain Greek yogurt โ€” the protein base. Use full-fat or 2% for the thickest, creamiest texture. Fage and Siggi’s are both excellent for this. The thicker the yogurt, the more it sets up like cheesecake.
  • Vanilla protein powder โ€” stirs directly into the yogurt and adds protein without changing the texture much. PEScience Vanilla Indulgence is my go-to. Make sure it’s a powder that mixes smoothly โ€” clumpy protein powder makes for a gritty yogurt cup.
  • Biscoff spread (cookie butter) โ€” the magic shell ingredient. It melts smooth in the microwave, pours over the yogurt, and hardens into a crackable shell when it hits the cold. Lotus Biscoff spread is the original. Trader Joe’s Cookie Butter is an excellent alternative.
  • Crushed Biscoff cookies โ€” pressed into the still-warm Biscoff layer immediately after pouring so they stick. This is your crunchy topping and it’s non-negotiable.
  • Sweetener โ€” just 1 teaspoon. Stevia, monk fruit, or regular sugar all work. Adjust to taste based on how sweet your protein powder is.

How to Make a Biscoff Yogurt Cup

  1. Mix the yogurt base. In a small bowl or ramekin, stir together the Greek yogurt, vanilla protein powder, and sweetener until completely smooth. No lumps โ€” take an extra minute here and it’s worth it.
  2. Melt the Biscoff spread. Place 1โ€“2 tablespoons of Biscoff spread in a small microwave-safe bowl. Microwave in 15-second intervals, stirring between each, until fully melted and pourable. Don’t overheat or it gets too runny.
  3. Pour the magic shell. Immediately pour the melted Biscoff spread over the yogurt and tilt the bowl gently to spread it into an even layer. Work quickly โ€” it starts to set as soon as it hits the cold yogurt.
  4. Add the cookie crumble. Immediately press crushed Biscoff cookies into the still-warm Biscoff layer before it sets. Once it hardens, toppings won’t stick.
  5. Freeze for 15 minutes. Place in the freezer for exactly 15 minutes โ€” long enough for the Biscoff shell to harden completely, not so long that the yogurt freezes. Set a timer.
  6. Crack and enjoy. Take it out, tap the shell with your spoon, and enjoy the most satisfying moment of your day.

Don’t skip the 15-minute freeze. This is what transforms liquid Biscoff into a crackable shell. Less than 15 minutes and the shell is still soft. More than 30 minutes and the yogurt starts to freeze solid. Set a timer.

Work fast on the toppings โ€” once the melted Biscoff hits the cold yogurt it begins setting immediately. Have your crushed cookies ready before you pour.

Use thick Greek yogurt โ€” watery yogurt makes a sloppy cup and the shell doesn’t set as cleanly. Fage 2% or full-fat is the move.

Variations

  1. Chocolate magic shell โ€” melt 1 tbsp dark chocolate chips with ยฝ tsp coconut oil instead of Biscoff spread for the shell layer. Top with flaky salt.
  2. Peanut butter โ€” swap the Biscoff spread for peanut butter magic shell and use crushed Nutter Butters on top.
  3. Caramel โ€” use caramel sauce instead of Biscoff for the shell. Pairs beautifully with a pinch of sea salt on top.
  4. Extra cheesecake vibes โ€” add 1 tablespoon of cream cheese to the yogurt base and mix until smooth before adding the shell. Tangier, richer, more dessert-like.
  5. No protein powder โ€” skip the protein powder and use vanilla Greek yogurt instead. Slightly lower protein but still delicious.

Store any leftovers covered in the fridge for up to 3 days. The shell softens slightly in the fridge but is still delicious โ€” re-freeze for 10 minutes to get the crackable texture back if needed.
