HOW TO MAKE THE HIGH PROTEIN COTTAGE CHEESE LAVA CAKE RECIPE

  1. First things first, toss your cottage cheese, cocoa powder, chocolate protein powder, egg, and sugar-free sweetener into a microwave-safe bowl or mug. Mix until the mixture is combined. You can blend in a blender or food processor if you desire a smoother texture, but I prefer without blending. Then add chocolate chips and mix around.
  2. Pop it into the microwave for 90 seconds. The top should be mostly set, but when you cut into it, the inside should be ooey-gooey, just like any good lava cake should be. Keep an eye on itโ€”nobody wants an overcooked lava cake!
  3. As soon as it’s done, let it cool for a minute (if you can wait that long), then dive in! The rich, molten center will ooze out like the chocolatey surprise it is. Top with a dollop of Greek yogurt, whipped cream, ice cream, or even more chocolate if youโ€™re feeling extra.

TIPS AND TRICKS FOR BEST RESULTS

  • Watch the Bake Time: Keep an eye on your cake as it cooks! The edges should be set, but the center should still be slightly jiggly for that perfect lava flow.
  • Donโ€™t Overfill: Leave a little room at the top of your ramekins to allow the cake to rise. No one wants a lava explosion in the microwave!
  • Get Creative with Toppings: While the cake is amazing on its own, add some extra flair with toppings like whipped cream, fresh fruit, or even a drizzle of peanut butter for extra indulgence.
  • Serve Immediately: Enjoy your lava cake warm for the ultimate ooey-gooey experience. The molten center is best right out of the oven!

This was absolutely guilt free and really good. Will try next time with blended cottage cheese just to see the difference, but it was good without blending.

This was delicious and super easy to make! Next time I plan to use a tastier protein powder. I used one I donโ€™t love because it is what I had on hand and I could taste it a bit. Still delicious, though!

This hit the spot for something sweet. I added two tablespoons of chocolate chips. Next time Iโ€™m gonna whip the cottage cheese first. Yum. ๐Ÿ˜‹

Accidentally left my review under comments – both the taste and texture were off.

  6. Can’t wait to try this! Only have vanilla protein powder, but I don’t think it will matter!
