Add the onion and garlic to a small food processor and blend into a smooth pulp. - Mix the meat:
Combine the ground beef or chicken, onion pulp, and all seasonings in a bowl. Mix until fully combined. - Shape the doner:
Divide the mixture in 3. Place one portion on a sheet of parchment paper. Place another piece of parchment paper on top and flatten the meat mixture using a rolling pin. Repeat with the all portions. - Roll it up:
