Homemade doner kebab sounds complicated, but this version is shockingly simple and tastes just like the real deal.

The meat gets blended with spices, rolled up in parchment, baked until juicy, then crisped in the oven so you still get those iconic doner-style edges. Itโ€™s one of those recipes that feels like takeout but way fresher, higher in protein, and honestly pretty hard to mess up.

Simple Ingredients You Need For The Easy Homemade Doner Kebabs

Doner Kebab Meat

  • Extra lean ground beef or ground chicken โ€“ can use lamb, ground turkey or ground meat of choice.
  • Half a medium yellow onion โ€“ blended for moisture and flavour.
  • Garlic cloves
  • Salt & black pepper
  • Paprika
  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Cumin
  • Ground cinnamon
  • Coriander

Garlic Sauce

  • Mayonnaise โ€“ creamy base.
  • Plain greek yogurt
  • Garlic clove, minced โ€“ gives it that punch.
  • Garlic powder
  • Paprika โ€“ mild heat and colour.
  • Lemon juice โ€“ brightens the sauce.
  • Salt and black pepper

How To Make

  1. Prep the aromatics:
    Add the onion and garlic to a small food processor and blend into a smooth pulp.
  2. Mix the meat:
    Combine the ground beef or chicken, onion pulp, and all seasonings in a bowl. Mix until fully combined.
  3. Shape the doner:
    Divide the mixture in 3. Place one portion on a sheet of parchment paper. Place another piece of parchment paper on top and flatten the meat mixture using a rolling pin. Repeat with the all portions.
  4. Roll it up:
    Starting from the long side, fold the parchment over the meat and continue rolling until it forms a long, flat rope.
  5. Bake:
    Place both parchment-wrapped rolls on a baking sheet and bake at 400ยฐF for about 30 minutes or until cooked through.
  6. Break it apart:
    Let the rolls cool slightly, then unroll the parchment and break the meat into strips or pieces.
  7. Crisp it up:
    Squeeze a little lemon juice over the top, spread the meat out on the baking sheet, and return it to the oven until lightly golden and crisp.
  8. Make the garlic sauce:
    Stir together all ingredients for the garlic sauce.
  9. Serve:
    Enjoy the doner in a pita or bowl with lettuce, tomato, pickles, red onion, and plenty of garlic sauce or garlic yogurt.

CHICKEN MIXTURE

  • โ…“ cup plain greek yogurt
  • 3-4 cloves garlic minced
  • 2 tsp garlic powder
  • salt and black pepper
  • 2-3 tbsp water to thin sauce

DONAIR

  • 4 lavish wraps
  • lettuce
  • tomatoes
  • pickles
  • red onions or pickled red onion
  • jalapeรฑos
