Crispy cheese crusted eggs are hard boiled eggs sliced in half, placed face-down onto melted cheese in a hot pan, and cooked until a golden, crunchy cheese crust forms on the cut side. Ready in 15 minutes, naturally gluten-free, and each serving packs around 20 grams of protein.

I’ve been obsessed with this recipe lately. It’s the kind of thing that sounds weird until you try it โ€” and then you make it three days in a row. The cheese forms a crispy, salty, cracker-like crust on the egg that completely transforms a plain hard boiled egg into something genuinely crave-worthy.

Ingredients You’ll Need

  • Hard boiled eggs โ€” boiled for 7 minutes for a medium set yolk. Make them ahead โ€” this recipe is a great way to use up leftover hard boiled eggs from the fridge.
  • Shredded cheese โ€” mozzarella is my go-to for a mild, melty crust. Parmesan gives you a saltier, crispier frico-style crust. Sharp cheddar adds flavor. Any cheese that melts easily works โ€” avoid pre-shredded bags if you can, they have a coating that prevents smooth melting.
  • Oil or butter โ€” just a small amount to prevent sticking. Butter adds flavor; olive oil works perfectly too.
  • Salt and pepper โ€” season the cut side of the egg before placing it face-down.

How to Make Crispy Cheese Crusted Eggs

  1. Hard boil your eggs. Bring a pot of water to a boil, add eggs, and cook for 7 minutes. Transfer immediately to an ice bath to stop cooking. Peel and slice in half lengthwise.
  2. Heat the pan. Warm a non-stick skillet over medium heat and add a small amount of oil or butter.
  3. Add the cheese. Sprinkle shredded cheese directly into the pan in small piles roughly the size of each egg half. Let it melt for about 30 seconds until it starts to bubble.
  4. Place eggs face-down. Season the cut sides of the eggs with salt and pepper, then press each half cut-side down onto a cheese pile.
  5. Cook until crispy. Cook undisturbed for 2โ€“3 minutes until the cheese turns golden brown and pulls away from the pan cleanly. Carefully lift each egg with a spatula โ€” the cheese crust should come with it.
  6. Serve immediately. Cheese crust side up so you can see it. Top with whatever sounds good.

The key is patience on step 5 โ€” don’t try to move the eggs until the cheese is fully crisped. If it sticks, it’s not ready yet.

Topping Ideas

These are great plain, but even better with:

  • Hot sauce or chili oil
  • Everything bagel seasoning
  • Fresh chives or green onion
  • A dollop of cottage cheese for extra protein
  • Smashed avocado on the side
  • Dipped into warm tomato soup โ€” sounds strange, genuinely excellent
