Each cake pop costs roughly 50 cents to make at home compared to $3+ at a coffee shop.

I started making these for birthday parties because the bakery cake pops were costing me $30+ for a dozen, and the homemade-from-scratch versions took an entire Sunday afternoon. The boxed cake mix shortcut cuts the time in half AND tastes almost identical to the Starbucks version (the cake mix is doing most of the heavy lifting anyway).   • Sprinkles โ€” nonpareils (the tiny round ones) look most professional. Jimmies (the long ones) work too but tend to sink into the coating.

  • Cookie scoop โ€” for consistent ball sizes (a 1-tablespoon scoop is the right size).
  • Tall narrow microwave-safe glass or mug โ€” makes dipping way easier than a wide bowl. The chocolate stays deep and you can fully submerge the cake pop.

How to Make Funfetti Cake Pops

  1. Bake the cake. Prepare the funfetti cake mix according to the box directions. Pour into a greased 9ร—13 baking dish (or two 8ร—8 pans) and bake at 350ยฐF until a toothpick inserted in the center comes out clean (usually 25-30 minutes). Let cool completely โ€” this is the most important step. Warm cake will melt the frosting and turn into mush.
  2. Crumble the cake. Once cooled, use your hands or a fork to crumble the cake into fine crumbs in a large bowl. Remove and discard the brown crust from the top and edges โ€” it affects the texture and makes the cake balls less smooth. (Yes, this feels wasteful. Yes, it makes a difference.)

  5. Freeze the balls. Freeze the rolled cake balls for 30-45 minutes until firm but not rock-hard. They need to be cold enough to hold shape during dipping but not frozen solid (frozen-solid balls cause cracking when they hit warm chocolate).
  6. Insert the sticks. Melt about ยผ cup of white chocolate wafers in the microwave (30-second intervals, stirring between). Dip the tip of each lollipop stick into the melted chocolate, then insert into a cake ball about โ…” of the way in. The chocolate acts as glue. Return cake pops to the freezer for another 10-15 minutes so the chocolate sets.
  7. Melt the rest of the chocolate. Microwave the remaining white chocolate wafers in 30-second intervals, stirring between, until fully melted. Pour into a tall narrow glass or mug for easier dipping. Let the chocolate cool for 3-5 minutes before dipping โ€” too-hot chocolate causes cracking later.
  8. Dip and decorate. Hold a cake pop by the stick and dip straight down into the melted chocolate, fully submerging the cake ball. Gently tap the stick on the rim of the glass to remove excess. Turn upside down and rotate slowly to even out the coating. Immediately add sprinkles before the chocolate sets.
  9. Set upright to dry. Stand each cake pop in a styrofoam block (or upside-down colander, or a box with holes poked in it) to dry. Let set for 15-20 minutes at room temperature, or 5-10 in the fridge.
  10. Serve or store. Once fully set, the cake pops are ready to eat or store.

Tips for the Best Cake Pops

  • Cool the cake completely. This is non-negotiable. Warm cake = melted frosting = mushy balls = cake pops that fall off sticks. Bake the night before if you can.
  • Remove the brown crust. It looks like a small thing but the texture difference is significant. Bakeries do this; you should too.
  • Start with โ…“ cup of frosting and add more only if needed. Most people overdo the frosting. The mix should hold together when squeezed but not feel wet or sticky. (Per BrooklynMom: day-old cake is actually easier to work with because it’s already slightly drier.)
  • Freeze the balls before dipping, but don’t freeze them rock-hard. 30-45 minutes is the sweet spot. Too cold and the cake ball will crack the warm chocolate coating.
  • Cool the melted chocolate for 5 minutes before dipping. Too-hot chocolate is the #1 cause of cracking shells. The chocolate should be melted but no longer steaming.
  • Use a tall narrow glass for dipping. A wide shallow bowl is harder to work in. A tall mug or glass lets you fully submerge the cake pop with minimal mess.
  • Buy more chocolate than you think you need. 24 oz for a full batch from a single cake mix. Running out mid-dip is a disaster.
  • Add sprinkles immediately after dipping. White chocolate sets fast. If you wait more than 30 seconds, the sprinkles won’t stick.

Troubleshooting (the 3 Things That Actually Go Wrong)

My cake pops are cracking after dipping. The chocolate is too hot, or the cake balls are too cold (frozen solid). Let the melted chocolate sit for 5 minutes after melting to cool slightly. Pull the cake balls from the freezer 5-10 minutes before dipping if they’ve been frozen for hours.

My cake balls fell off the stick. You skipped the “dip the stick in chocolate first” step in step 6. The chocolate on the stick acts as glue and is what holds the cake ball in place. Without it, gravity wins. To rescue: re-dip the stick tip in chocolate, push it into the cake ball, and let set in the freezer for 10 minutes before dipping again.

My chocolate is too thick to dip into. Add a teaspoon of vegetable oil or coconut oil at a time, stirring between additions, until the chocolate is smoother and pourable. Some brands of white chocolate are naturally thicker than others โ€” Ghirardelli and Merckens flow better than Wilton.

  • Melt candy melts in the microwave or in a double boiler. Dip each lollipop stick into the white chocolate, then stick into one of the cake pop balls. Do this with all of them and put back in freezer till they are solidified.
  • Gently dip the balls into the melted chocolate or spoon the chocolate onto balls and twirl to coat. Decorate with sprinkles if desired. Place them upright in a styrofoam block, or a box to harden. There you have it, you have easy cake pops!
