  • Large flour tortillas – can use whole wheat if you’re feeling fancy.
  • Ripe banana
  • Creamy peanut butter – can also use crunchy peanut butter, almond butter, sunflower seed butter, cashew butter, etc.
  • Honey – or maple syrup
  • Coconut oil
  • Cinnamon
  • White sugar – or monk fruit sweetener for a cinnamon sugar coating.
  • Optional: a handful of chocolate chips, cream cheese, Nutella, etc.

HOW TO MAKE

  1. Lay your tortilla flat on a clean surface. Spread a thin layer of peanut butter all over it.
  2. Peel your banana and place it at one end of the tortilla. Try to get a straight one; it makes rolling up easier.
  3. Drizzle the honey over the banana. Sprinkle a dash of cinnamon on top. If you’re adding chocolate chips, scatter them over the peanut butter layer.
  4. Carefully roll the tortilla around the banana.
  5. Brush the outside of the tortilla with melted coconut oil. In a small bowl, mix together the cinnamon and sugar. Sprinkle all over the coconut oil covered tortilla.
  6. Cut roll up into 8 pieces.
