Air Fryer Cottage Cheese Toast with Blueberries & Honey (19g Protein)

This air fryer cottage cheese toast turns one slice of sourdough into a warm, crispy, creamy breakfast with 19g of protein. The blueberries go jammy in the air fryer and the honey hits right at the end. Seven minutes, start to finish.

I make this at least four mornings a week and I am not exaggerating. Air fryer cottage cheese toast is a slice of toasted sourdough spread with cottage cheese, topped with fresh blueberries and honey, then crisped in the air fryer until the edges go golden and the berries turn jammy.

One slice lands around 19g of protein and it takes 7 minutes. The cottage cheese goes warm and soft, the blueberries melt into little pockets of jam, and the honey at the end makes it taste like dessert that snuck into the breakfast slot.

First time I made it I was rushing out the door and needed real protein that wasn’t another sad scoop in water. This was it.

Ingredients You’ll Need

  • Sourdough bread โ€” sturdy enough to hold the toppings without going soggy. Gluten-free, whole grain, or whatever loaf you’ve got works too.
  • Cottage cheese โ€” the protein engine here. Full-fat stays creamy, low-fat keeps the calories down. Blend it first if the curds aren’t your texture.
  • Fresh blueberries โ€” they turn jammy and sweet in the air fryer. Cold fresh ones hold their shape better than frozen.
  • Honey โ€” drizzled at the very end so it stays glossy and the flavor stays loud.
  • Cinnamon โ€” optional, but a little sprinkle over the top is warm and cozy and I almost never skip it.

Swaps and Substitutions

  • Trade the blueberries for raspberries, sliced strawberries, or diced peach.
  • Use maple syrup or a sugar-free syrup in place of honey.
  • Swap the cottage cheese for whipped ricotta or goat cheese if you want a different creamy base.

How to Make Air Fryer Cottage Cheese Toast

  1. Spread the cottage cheese. Take one slice of sourdough and spread a thick, even layer of cottage cheese right to the edges. Want it smooth instead of curdy? Blend the cottage cheese first in a food processor or with an immersion blender.
  2. Add the blueberries. Scatter fresh blueberries over the top and press them in lightly so they stay put through the air fry.
  3. Air fry. Place the toast in the air fryer basket at 360ยฐF for 4 to 6 minutes, until the edges crisp up and the blueberries go jammy.
  4. Drizzle and finish. Pull it out, drizzle honey over the top, add a pinch of cinnamon, and eat it warm.

Tips for the Best Cottage Cheese Toast

  • Spread to the edges. An even layer keeps every bite creamy and stops the toppings sliding off mid-air-fry.
  • Dry your berries. Patting blueberries dry before they go on keeps the toast from going watery.
  • Drizzle honey last. Honey added after air frying stays glossy and tastes stronger than if you cook it in.
  • Watch it the first time. Air fryers all run a little different, so check around the 4-minute mark until you know your machine.

Air Fryer Cottage Cheese Toast FAQs

Does cottage cheese melt in the air fryer? Not really. Cottage cheese has a high moisture content, so it warms and softens instead of melting into a smooth layer. You get creamy, warm cottage cheese rather than gooey melted cheese, which is what you want under the blueberries.

Can I make cottage cheese toast in the oven instead? Yes. Bake it at 400ยฐF for 8 to 10 minutes, until the edges are crisp and the berries soften. The air fryer is faster, but the oven gives you the same warm, jammy result.

Can I make it ahead of time? This one is best fresh, while the toast is still crisp and the toppings are warm. If you do have leftovers, store them in the fridge for up to a day and re-crisp in the air fryer at 360ยฐF for a couple of minutes before eating.

Instructions

  • Toast a piece of sourdough bread. Once toasted, spread a generous layer of cottage cheese on top. If you're not a fan of the texture of cottage cheese, you can blend it in a small food processor, or using an immersion blender.
  • Sprinkle a good amount of fresh blueberries over the cottage cheese. Theyโ€™ll get juicy and extra sweet in the air fryer, which is just divine.
  • Pop your toast into the air fryer basket. Set it at 360 degrees F for about 4-6 minutes. You want the toppings to warm up nicely.
  • Once itโ€™s done, drizzle honey over the top and add a sprinkle of cinnamon for that extra kick.
